Stuffed Portobello Mushrooms

The portobello mushroom is one of the most widely consumed mushroom varieties in the world. The button mushroom and cremini are the same variety of mushroom, just earlier growth stages than the portobello. The portobello is the oldest stage, so it has the most meaty and savory flavor. Portobello mushrooms taste intensely meaty and savory, with loads of umami. While they taste meaty, you do need to add protein if this is your main course. I added chickpeas and pine nuts for added protein. This combined with sautéed greens makes a delightful dish.

Equipment

  • 1 roasting pan
  • 1 saute pan

Ingredients
  

  • 2 portobello mushrooms large
  • 6 oz spinach mixed hearty greens (baby kale, spinach, chard)
  • 2 tbsp olive oil
  • 1/2 cup chickpeas, canned coated in olive oil, salt, cumin, lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup pine nuts

Instructions
 

Mushrooms

  • Wipe the mushrooms with a wet paper towel to remove any dirt.
  • Remove the stems from the mushrooms.
  • Using a spoon scoop out the gills in the mushroom caps.
  • Brush some olive oil on the inside and outside of the mushrooms.
  • Bake at 350 degrees for 10- 15 minutes until softened and browned.

Greens

  • Add some olive oil to your sauté pan and heat.
  • Add some salt and pepper to the greens.
  • Add your greens and cook until wilted.

Chickpeas

  • Place chickpeas in a small bowl.
  • Mix in the olive oil, cumin, salt and lemon juice.

Stuffed Mushrooms

  • Fill each mushroom cap with the sautéed greens.
  • Add chickpeas to the greens.
  • Top with pine nuts.
  • Bake in 350 degree oven for 10 minutes.

Ingredients
  

Pumfu

  • 1 package Pumfu
  • 1 tbsp Sesame seed oil toasted
  • 2 tbsp Tamari or Coconut Aminos if soy free

Cauliflower Rice

  • 1/2 cup cauliflower rice cooked

Salad Greens

  • 1/2 cup mixed salad greens
  • 3 tbsp salad dressing your choice

Instructions
 

Pumfu

  • Cut pumfu into small cubes
  • Sautée pumfu in toasted sesame seed oil in skillet
  • Add Tamari or Coconut Aminos and coat the pumfu
  • Continue cooking until nicely browned

Cauliflower Rice

  • Prepare cauliflower rice in food processor or purchase prepared cauliflower rice
  • Sautée in olive oil until soft and browned

Salad Greens

  • Choose your favorite salad greens
  • Place the greens, cauliflower rice and pumfu into bowl
  • Toss with your favorite salad dressing

Shrimp Salad with Bok Choy, Mango and White Beans

Looking for a tasty salad loaded with protein and calcium and easy to make? Here is your answer to an easy lunch or dinner.
Why shrimp? It’s not only high in protein but also low in calories, carbs, and fat. Three ounces (85 grams) of shrimp contain 12 grams of protein and only 60 calories. Shrimp is rich in selenium, choline, and vitamin B12. It also contains good amounts of niacin, zinc, vitamin E, and vitamin B. Add to this white beans which are high in fiber and protein and bok choy which is  high in calcium, phosphorous, iron, magnesium, and vitamin K, and you have the perfect salad.

  • 2 med Bok Choy cut into pieces
  • 1 mango cut into small cubes
  • 1 15 oz can white beans rinsed and drained
  • 1/4 cup lemon juiced
  • 1/4 cup olive oil
  • 1 tsp mustard dijon
  • 1 clove garlic chopped
  • 1/4 inch ginger fresh, diced
  • dash salt
  • dash pepper
  • 1 tsp maple syrup

Instructions
 

Shrimp Salad

  • Clean and peel the shrimp - to make it really easy, purchase fresh shrimp pre-cleaned and cooked
  • Cut Bok Choy and mango
  • Rinse and drain the white beans
  • Place the Bok Choy, mango and white beans into a salad bowl
  • Add the shrimp
  • Coat with lemon garlic dressing - see below

Lemon Garlic Ginger Dressing

  • Add the lemon juice, olive oil, garlic, ginger, mustard, maple syrup, salt and pepper to a blender
  • Blend on high for about 15 seconds until fully blended

Chocolate Bone Treats

There's plenty of mystique tied to chocolate. Over the centuries, cocoa has been touted as an aphrodisiac and a health elixir. The Mayans even used cocoa as a form of cash and buried their aristocrats with it. Cacoa powder is rich in polyphenols, healthy fats and minerals such as copper and manganese. A plus is using Botanica Origins Cacoa Powder which is low in cadmium.
Let's not forget about the benefits of walnuts. Walnuts contain a high amount of manganese. Manganese has been shown to prevent osteoporosis in combination with the minerals calcium and copper. Magnesium, another mineral in walnuts, is important for bone formation as it helps with the absorption of calcium into the bone.

Ingredients
  

  • 1 cup Dates pitted and packed
  • 2 cups Walnuts raw
  • 6 Tbsp Cocoa powder I used Botanica Origins Cacao Powder because it is low in cadmium.
  • 3 Tbsp Hemp Seeds
  • 3 Tbsp Almond Butter Creamy
  • 1/4 tsp Sea salt
  • 3 Tbsp coconut shredded
  • 1 Tbsp coconut oil Optional - for added fudginess

Instructions
 

  • Pulse pitted dates in a food processor until it forms small pieces.
  • Add all other ingredients into the processor and pulse. (accept for shredded coconut)
  • Do not over pulse or over blend.
  • Scoop out and roll into balls.
  • Roll balls into shredded coconut
  • Store in an air tight fridge up to a week or freeze for 2-3 months.

  • Pour 8 ounces of boiling water over the tea and allow to steep for 3-5 minutes.

  • 2 lemons organic (approximately 6-8 Tbsp)
  • 10 Tbsp olive oil organic
  • 1 tsp sea salt course
  • 2 cloves garlic

Instructions
 

  • Squeeze the juice from the lemon.
  • Add olive oil.
  • Place into glass jar.
  • Rough chop two garlic cloves–depending on your garlic tolerance.
  • Using a mortar and pestle, combine the garlic and sea salt and grind until it becomes a paste.
  • Add garlic-salt paste to your jar with the lemon and olive oil.
  • Shake vigorously and serve.

Notes

Leftover dressing: Refrigerate and use within 2 weeks.
Label salad dressing with date. I use masking tape and marker.
Perfect over salads, steamed veggies or as a dip for artichokes.

Salmon Salad with Avocado

Here is an easy, no-cook recipe that is great for lunch or dinner. Using canned salmon with bones and skin is a great source of protein, calcium, phosphorus, omega-3 fatty acids, vitamin D and other essential minerals; the bones are part of that package.  The bones will not only provide substantial nutrition, but they also add texture and flavor to the dish.

  • 1 can salmon with bones and skin
  • 1/4 cup celery diced
  • 1 Tbsp parsley chopped, fresh (or 1 tsp dried)
  • 1/4 cup Greek Yogurt organic, full fat
  • 1 tsp mayonaise
  • 1/2 tsp lemon juice or lime juice
  • 1/2 tsp mustard Dijon
  • 1 avocado
  • 1 dash salt
  • 1 dash pepper

Instructions
 

  • Open canned salmon and drain the liquid.
  • Add the salmon to a small mixing bowl and mash.
  • Add the yogurt, mayonnaise, celery, parsley, lemon/lime juice, mustard, salt and pepper.
  • Mix well.
  • Halve the avocado lengthwise and remove the pit.
  • Fill each avocado half with 1/4 cup of the salmon mixture.

Eggs with Bok Choy, Cheddar Cheese, Sun-dried Tomatoes and Kalamata Olives

I was in the mood for eggs and also wanted great flavor with high sources of protein and calcium. I love the combination of sun-dried tomatoes and Kalamata Olives and with the addition of shredded cheddar cheese it makes it super creamy. You can use dairy cheese or a plant based cheese. I found that the plant based brand Daiya has 159 grams of calcium in a 1/4 cup serving. The Bok Choy adds a wonderful crunch (make sure not over cook). Bok choy also has nutrients that help promote bone health — including iron, calcium, phosphorus, magnesium and bone-building vitamin K.

  • 1/2 cup bok choy cut, using stems
  • 1/8 cup sun-dried tomatoes diced
  • 1/8 cup Kalamata olives diced
  • 1 tsp olive oil or choice of oil
  • 1 dash salt
  • 1 dash black pepper
  • 1/4 cup Cheddar Cheese

Instructions
 

  • Wash and dry Bok Choy
  • Cut Bok Choy into small pieces, using the crunchy white stems as well as the greens
  • Sauté  Bok Choy in olive oil for 2-3 minutes
  • Add the diced sun-dried tomatoes, diced Kalamata olives and cook another 2 minutes.
  • Beat the eggs with salt and pepper and add to the pan.
  • Add the shredded cheese to the eggs.
  • Cook eggs until done to your liking.
