Acorn Squash with Cinnamon and Walnuts

Here are some reasons I chose this recipe. Acorn squash is a highly nutritious carb choice. The bright orange flesh of acorn squash is packed with vitamin C, provitamin A, B vitamins, potassium, magnesium, iron, and manganese, all of which are critical for health.
Unlike refined carb sources like white rice and white pasta, acorn squash is an excellent source of fiber,  which slows digestion, helps regulate blood sugar levels, and promotes feelings of fullness. 
But, I really wanted to highlight Ceylon cinnamon. Besides tasting wonderful it provides many health benefits. Cinnamon, due to its exotic flavor and aroma, is a key ingredient in the kitchen. From the beginning of its use in 2800 BC by our ancestors for various purposes such as anointment, embalming and various ailments, it has encouraged the interest of many researchers. Recently many trials have explored the beneficial effects of cinnamon in Parkinsons, diabetes, blood, and brain. 1/2 tsp of Ceylon cinnamon per day is recommended for reducing insulin resistance  in the body. This helps glucose metabolize in the liver.

Ingredients
  

  • 1 acorn squash
  • 1/4 cup walnuts broken into pieces
  • 2 TBSP butter melted
  • 2 TBSP maple syrup
  • 1 tsp cinnamon Ceylon

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up.
  • To prepare the squash, use a sharp chef’s knife to slice through it from the tip to the stem.
  • Use a large spoon to scoop out the seeds and stringy bits inside, and discard those pieces.
  • Brush 1 TBSP melted butter onto each half.
  • Add 1 TBSP maple syrup into each half.
  • Sprinkle cinnamon on both halves.
  • Cover the squash with a piece of foil and roast for 30 minutes.
  • Remove foil and bake for 5-10 minutes longer, until squash is fork-tender. Serve immediately.

Salmon in Nori Muffin Cups

Salmon is a nutritious food that contains protein, vitamins, and healthy fats. Salmon is a good source of omega-3 fatty acids, which are heart-healthy and can help reduce inflammation and support brain health. Salmon and other types of fatty fish offer an array of bone-boosting nutrients. Salmon also contains selenium and studies have shown that selenium intake may be necessary for bone health.

Ingredients
  

Nori and Rice

  • 3 sheets nori paper
  • 1 cup rice cooked

Salmon

  • 1/2 lb salmon filet remove skin and cube
  • 1 Tbsp olive oil
  • 1.5 tsp sesame oil toasted
  • 1.5 tsp tamari
  • 1.5 tsp rice wine vinegar
  • 1.5 tsp honey
  • 1.5 tsp ginger ground
  • 2 cloves garlic
  • 2 scallions diced
  • 1.5 tsp sesame seeds black preferred

Glaze

  • 1 Tbsp sesame oil toasted
  • 2 Tbsp honey
  • 2 tsp tamari
  • 1 tsp ginger ground
  • 1 tsp sesame seeds black preferred

Instructions
 

  • Preheat oven to 400 degrees F
  • Cut the nori sheets into 4 equal squares
  • In a bowl, whisk the olive oil, toasted sesame oil, tamari, rice wine vinegar, honey, ginger, garlic, sesame seeds and scallions.
  • Add the cubed salmon and marinate for an hour.
  • To each cut nori sheet add 1 tbsp cooked rice. Fully cooled.
  • Move the nori square to a muffin slot, pushing down the rice.
  • Add 4-5 marinated salmon cubes to each muffin round. Fill all 6 muffin rounds.
  • Place muffin pan into the heated oven and bake for 15 minutes,
  • Whisk together all of the glaze ingredients and add some to the baked salmon for added flavor.

Warm Roasted Cauliflower Salad

I love roasting cauliflower and most of the time that is how I prepare it with a little olive oil and spices. But here is my recipe that adds some additional protein and other nutrients to make it into an entire meal. In the summer, try making this wonderful salad with fresh tomatoes instead of canned. Leftovers are always tasty, warm or cold.

Ingredients
  

Cauliflower Salad

  • 1 cauliflower med to large head
  • 3 TBSP olive oil
  • 1 can tomatoes fire roasted, drained or fresh
  • 1 can garbanzo beans drained and rinsed
  • 1/2 bunch parsley chopped
  • 1 dash salt
  • 1 dash pepper
  • 1/4 tsp Berbere or cumin, smoked paprika, chili powder

Lemon Tahini Dressing

  • 1/3 cup tahini
  • 1/3 cup water
  • 1/4 cup lemon juice
  • 2 cloves garlic minced
  • 1/2 tsp cumin
  • 1/4 tsp salt

Instructions
 

Cauliflower Salad

  • Break cauliflower into medium florets
  • Toss cauliflower in a bowl with 2.5 Tbsp olive oil
  • Place in a lightly-oiled parchment-covered sheet pan (large).
  • Roast in a preheated 375 F oven for 15 minutes.
  • Remove pan and sprinkle with salt, pepper and optional spices.
  • Add drained tomatoes. Stir/flip the cauliflower, tomatoes and spices.
  • Return the pan to the oven and roast for another 15 minutes.
  • In the meantime, put drained garbanzos in bowl and toss with remaining 1/2 Tbsp olive oil.
  • Remove pan from oven at 30 minutes, add garbanzos and stir all.
  •   Cook for another 5-10minutes
  • Add the parsley
  • Drizzle the lemon tahini dressing over top, and toss to combine. Serve warm or cold.

Lemon Tahini Dressing

  • While the cauliflower is cooking, make the tahini dressing.
  •  Add the tahini, water, lemon juice, garlic, cumin and salt to a blender. Blend until smooth, then refrigerate until ready to serve.

  • 1 knife

Ingredients
  

  • 1 cup lentils dried green or borwn
  • 2 cloves garlic finely chopped
  • 2 bell peppers red or yellow, cored, seeded and cut into 1/2 inch pieces
  • 1 carrot medium, finely chopped
  • 1/2 onion small, chopped
  • 1/4 cup vinegar red wine preferred
  • 1/4 cup olive oil
  • 1 tsp mustard
  • 1/4 cup parsley fresh, chopped
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Rinse the lentils well and pick over to remove any debris or pebbles.
  • Place lentils and garlic into a large saucepan.
  • Cover with 4 cups water and bring to a boil.
  • Turn heat to medium low and cover pot.
  • Simmer until lentils are tender but not mushy, about 20-25 minutes.
  • While lentils are cooking, mix together vinegar, oil, salt, pepper and mustard in a small bowl or glass jar. Set aside.
  • Chop the bell peppers, carrot, onion and parsley and set aside.
  • When lentils are done, drain well and place into a large mixing bowl. Let cool for 15 minutes.
  • Add chopped vegetables and vinegar/oil mixture to the cooked vegetables.
  • Toss all ingredients gently, but well.
    Refrigerate for 1 hour to let the flavors blend before serving.

Ingredients
  

  • 4 zucchini medium- cut into chunks
  • 1 slice mushroom dried Reishi
  • 1 Bay leaf
  • 1 onion medium - chopped
  • 2 cloves garlic chopped
  • 1 dash sea salt
  • 1 TBSP ghee or olive oil
  • 1/2 tsp cumin
  • 1 cup mushrooms shitaki- sliced
  • 2 cups kale or other greens - chopped
  • 1 cup parsley
  • 1 cup cilantro
  • 1/2 cup sauerkraut adds probiotics
  • 1 lemon juiced
  • 2 TBSP nutritional yeast optional
  • 1 tsp smoked paprika optional
  • 2 TBSP olive oil

Instructions
 

  • Cut zucchini into even chunks
  • Add to pot and cover with water
  • Add salt, Reishi and bay leaf
  • Cook on a slow boil until zucchini is tender
  • While the zucchini is cooking, chop your onion, mushrooms and garlic and saute in the ghee with cumin.
  • Remove the Reishi and bay leaf and add the zucchini and water into your blender.
  • Blend until smooth.
  • Add the onion mix to the blender and blend until smooth.
  • Add the kale to the bender and blend until smooth.
  • Add the parsley and cilantro, juice of lemon, olive oil and blend.
  • Taste for seasoning and adjust to your liking. I like to add some nutritional yeast for its benefits as well as some smoked paprika for flavor.
  • Serve with a topping of hemp hearts or sesame seeds.

Ingredients
  

  • 8 cups greens pick three greens; kale, collards, bok choy or dandelion chopped
  • 3 Tbsp Olive oil
  • 1/2 cup onions chopped
  • 3/4 cup celery chopped
  • 3 cloves garlic chopped
  • 5 cups vegetable stock I use organic bullion cubes for ease
  • 2 cups cilantro chopped fresh herbs of your choice
  • 1/2 cup pepitas
  • 1 cup quinoa cooked
  • 1 dash salt to taste
  • 1 dash pepper to taste

Instructions
 

  • Soak Quinoa in water over night, rinse using a fine strainer, dry pan roast quinoa until they pop on a low/medium flame
  • In a large soup pot, sauté onions, garlic in olive oil until onions become translucent (approx 5-10 min). Add celery ad saute for 5 minutes more 2.Add greens3.Sauté for 1 minute
  • Add celery and sauté for 5 minutes more
  • Add greens and sauté for 1 minute
  • Add water or stock and simmer veggies until tender
  • In a separate pot cook quinoa 1 cup quinoa to 1 1/2 cups water
  • Bring quinoa to a boil. Turn off and cover.
  • Add herbs and seasonings to the cooked greens
  • Puree greens in blender.
  • Dry roast the pepitas (pumpkin seeds) in a skillet over low heat
  • Place the greens in a large bowl and add cooked quinoa.
  • Top with the roasted pepitas.

Hydrating Watermelon Refresher

Drinking enough water each day is crucial for many reasons: to regulate body temperature, keep joints lubricated, prevent infections, deliver nutrients to cells, and keep organs functioning properly. Being well-hydrated also improves sleep quality, cognition, and mood.
Experts recommend drinking roughly 11 cups of water per day for the average woman and 16 for men. And not all of those cups have to come from plain water; for example, some can come from water flavored with fruit or vegetables (watermelon, lemons, berries, or orange or cucumber slices). I have chosen to add watermelon to my Gerolsteiner to help with hydration and to add additional calcium and magnesium as well.

Ingredients
  

  • 1 bunch kale lacinato or curly
  • 2 Tbsp olive oil extra virgin
  • 1/4 tsp salt sea salt to taste
  • 1/4 tsp onion powder or garlic powder or turmeric

Instructions
 

  • Pre‐heat oven to 350º F.
  • Cut stems off the kale and remove center stalk. Wash the kale and dry thoroughly (otherwise your chips will be soggy). TIP:  I usually wash the kale before making the kale chips, wrap them tightly in paper towel and put the paper towel in a plastic bag then place in the fridge overnight
  • Cut or tear the kale into 2 inch strips with a knife or kitchen scissors. Toss the kale with olive oil, sea salt and any spices.
  • Spread kale out in a glass baking dish or a stainless steel cooking sheet (non-aluminum) and bake for 5 min
  • It’s best to consume kale chips immediately while they’re crisp. But if you have leftovers keep them fresh in a glass jar.

Velvety Vinagrette

Do you like the consistency of creamy dressings but not the calories? I made this dressing using avocado to create the creaminess instead of mayo, sour cream or buttermilk. You can use either lemon juice, lime juice or apple cider vinegar, all of which are alkalizing, which is good for your bones.
Let's not forget about avocados. Avocados are a source of vitamins C, E, K, and B6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They also provide lutein, beta carotene, and omega-3 fatty acids. Avocados contain high levels of healthy, beneficial fats.
Serve it on some beautiful Bok Choy and reap the benefits of a low oxalate vegetable with only 1 mg of oxalates per cup.
