Stuffed Portobello Mushrooms

The portobello mushroom is one of the most widely consumed mushroom varieties in the world. The button mushroom and cremini are the same variety of mushroom, just earlier growth stages than the portobello. The portobello is the oldest stage, so it has the most meaty and savory flavor. Portobello mushrooms taste intensely meaty and savory, with loads of umami. While they taste meaty, you do need to add protein if this is your main course. I added chickpeas and pine nuts for added protein. This combined with sautéed greens makes a delightful dish.

Equipment

  • 1 roasting pan
  • 1 saute pan

Ingredients
  

  • 2 portobello mushrooms large
  • 6 oz spinach mixed hearty greens (baby kale, spinach, chard)
  • 2 tbsp olive oil
  • 1/2 cup chickpeas, canned coated in olive oil, salt, cumin, lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup pine nuts

Instructions
 

Mushrooms

  • Wipe the mushrooms with a wet paper towel to remove any dirt.
  • Remove the stems from the mushrooms.
  • Using a spoon scoop out the gills in the mushroom caps.
  • Brush some olive oil on the inside and outside of the mushrooms.
  • Bake at 350 degrees for 10- 15 minutes until softened and browned.

Greens

  • Add some olive oil to your sauté pan and heat.
  • Add some salt and pepper to the greens.
  • Add your greens and cook until wilted.

Chickpeas

  • Place chickpeas in a small bowl.
  • Mix in the olive oil, cumin, salt and lemon juice.

Stuffed Mushrooms

  • Fill each mushroom cap with the sautéed greens.
  • Add chickpeas to the greens.
  • Top with pine nuts.
  • Bake in 350 degree oven for 10 minutes.
