Miso Soup

Miso (pronounced mee-so) is a delicious all purpose, high-protein seasoning which has played a major role in Japanese culture and cuisine for centuries.  It’s most often made from a combination of soybeans, cultured grain, and sea salt by a unique, double fermentation process, which was elevated to a state of fine craftsmanship in traditional Japan. Because of it’s popularity, miso now comes in non-soy versions.  My favorite brand is South River Miso. 
From South River: South River Miso is technically not a perishable food, and we are not required to put an expiration date on our product. Whether opened or unopened, South River Miso will keep almost indefinitely – even for years. Indeed, we have kept some miso for as long as 20 years without spoilage, even without refrigeration.
Miso cannot be added to boiling water as the good bacteria will die off.

Ingredients
  

  • 5 cups water
  • 2 tbsp wakame flakes (sea vegetables)
  • 1 cup greens chopped (kale, collards, spinach)
  • 2 tsp miso to taste
  • 1 small onion thinly sliced into half moons
  • 4 medium crimini mushrooms thinly sliced
  • 1 small carrot diced
  • 1 tbsp olive oil
  • 1/2 cup tempeh
  • 1/2 can black beans drained
  • 1/2 cup chicken breast cooked and diced

Instructions
 

  • Into medium sized pot add olive oil, sliced onions, carrots and mushrooms cook on medium heat until soft.
  • If using chicken or tempeh add now.
  • Add chopped green vegetables.
  • Add water and wakame and bring to a low boil.
  • If using black beans add now cook for 5 minutes
  • To blend flavors remove from heat ladle a small amount of soup broth into a small cup
  • Add 1-2 teaspoons of miso to broth to your desired taste

Asian Slaw

Asian slaw salad is a crisp, refreshing dish known for its vibrant colors and bold, zesty flavors.   • 1 bowl

Ingredients
  

Salad

  • 2 cups green cabbage shredded
  • 1 cup red cabbage shredded
  • 1 cup carrots shredded
  • 1 red bell pepper thinly sliced
  • 3 green onions sliced
  • 1 apple julienne
  • 1 tbsp sesame seeds optional
  • 2 tbsp pumpkin seeds roasted, optional

Dressing

  • 3 tbsp rice wine vinegar
  • 2 tbsp tamari
  • 1 tbsp maple syrup
  • 2 tbsp sesame seed oil toasted
  • 1 tsp ginger grated

Instructions
 

  • In a large bowl, combine all the slaw vegetables.
  • In a small bowl, whisk together all dressing ingredients until smooth or use a glass jar and shake until well blended.
  • Pour dressing over the slaw and toss well to combine. Let sit for at least 10 minutes before serving to allow flavors to meld. Garnish with sesame seeds and pumpkin seeds if using.

Sweet Chili Tofu

Here is a delightful sweet and savory dish that is great served over rice, tossed in a salad, in an Asian slaw, or just eaten as a snack. It is a great way to get a good boost of protein that tastes delicious. I like to make mine in my air fryer, but you can just as easily fry it or bake in the oven.

Ingredients
  

  • 1 block extra firm tofu pressed
  • 1/2 cup sweet chili sauce 365 by Whole Foods Market, Organic Sweet Chili Sauce https://amzn.to/3x3zRtN
  • 1 tbsp Tamari preferably low sodium
  • 2 tbsp cornstarch
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 pinch salt and pepper
  • 2 tbsp olive oil

Instructions
 

  • Press the block of tofu for at least 20 minutes to remove excess water. Pressing improves the texture of the tofu and will also help the tofu crisp up when cooking. Press easily by putting the tofu in between two plates and stacking heavy items on top.
  • Cut the tofu in to 16 large cubes or rectangles or any size you like.
  • Toss the tofu in Tamari sauce (low sodium) until coated and then add the cornstarch, garlic, onion, salt and pepper.
  • Air Fryer - Place parchment paper into your air-fry and coat with olive oil. Also spread a little spread olive oil over the tofu pieces and after preheating the air-fryer heat them at 400 degrees for 5 minutes and then turn and cook for another 5 minutes until golden brown.
  • Alternately, heat a large pan on medium-high heat. Add 1-2 tablespoons olive oil or enough to coat the base of the pan and pan fry each side until golden brown, about 3-5 minutes each side.
  • Toss the tofu with 1/4 cup sweet chili sauce and add more as desired when serving.

Bone-Boosting Asian Chicken and Cabbage Dish

Try this delicious combination of chicken and cabbage. Incorporating cabbage into your diet can be easy and versatile. Note: if you have hypothyroidism it is wise to consume cabbage in moderation due to containing goitrogens.

Ingredients
  

Salad

  • 4 cups cabbage shredded, red and or green
  • 2 chicken breast or chicken thighs cut into pieces and sauteed
  • 1 cup orange pieces
  • 1/2 cup green onions diced
  • 1/4 cup cilantro
  • 1 avocado cubed
  • 1/4 cup pumpkin seeds
  • salt and pepper to taste
  • 2 Tbsp olive oil

Dressing

  • 1/4 cup sesame oil toasted
  • 1/4 cup tamari low sodium
  • 2 Tbsp maple syrup
  • 1/4 cup orange juice
  • 1 Tbsp orange zest

Instructions
 

Salad

  • Shred the cabbage
  • Use a zester to zest the oranges
  • If using mandarin oranges, just peel and pull into sections
  • Cut up the chicken into bite size pieces. Season with salt and pepper and saute in olive oil for approximately 5 minutes until cooked through.
  • Dice the green onions
  • Cube the avocado
  • Chop the cilantro
  • Mix all ingredients in a serving bowl

Dressing

  • In a lidded glass jar, add the sesame oil, tamari, maple syrup, orange juice and orange zest. Shake well until completely emulsified.
  • Pour dressing over the combined salad and taste. Add more salt and pepper if needed.

Here is one of my favorite make once eat three times recipes. Eating from the rainbow is so easy when you make this chicken stir fry.  Stir fry dinners are the way to go. You get your protein, your veggies, everything in one skillet and in no time your meal is ready. I like to prep my chicken and veggies earlier in the day and when I am ready for my meal all I have to do is cook it in my skillet. This is called mise en place that means "putting in place" or "gathering". In cooking, it refers to the organization and discipline of a good chef, who prepares and organizes all their ingredients and supplies before starting to cook.

Stir Fry

  • 1 lb chicken breasts skinless, boneless, cut into 1 inch pieces - optional for vegetarians or vegans use tempeh or pumfu as your protein source
  • 2 tbsp olive oil
  • 1.5 cups broccoli florets
  • 1/2 yellow pepper cut into one inch pieces
  • 1/2 red pepper cut into one inch pieces
  • 1/2 cup carrots julienne
  • 1 zucchini julienne
  • 1/2 cup sugar snap peas sliced
  • 1/2 onion cut into half moons
  • 1 dash pepper to taste
  • 1 dash salt to taste

Sauce

  • 1/4 cup tamari low sodium
  • 1/8 cup sesame seed oil toasted
  • 1/8 cup olive oil
  • 1/8 cup maple syrup
  • 2 tsp ginger minced
  • 2 cloves garlic minced

Instructions
 

Stir Fry

  • Add 1 tablespoon olive oil to the the skillet or wok and cook over medium heat
  • Add the chicken and season with salt and pepper
  • Cook for about 3-5 minutes until cooked through. Remove chicken from the skillet and set aside.
  • Add the onions, broccoli, bell peppers, carrots, zucchini and snap peas to the skillet, stirring occasionally, and cook until crisp tender, about 5 minutes.
  • Add chicken back into the pan and stir to combine.
  • Add the sauce to the pan and pour over the chicken and vegetables and stir to combine.
  • Cook for about one minute and serve on rice if desired.

Sauce

  • Add all of the ingredients into a jar and shake until evenly mixed

Salmon is a nutritious food that contains protein, vitamins, and healthy fats. Salmon is a good source of omega-3 fatty acids, which are heart-healthy and can help reduce inflammation and support brain health. Salmon and other types of fatty fish offer an array of bone-boosting nutrients. Salmon also contains selenium and studies have shown that selenium intake may be necessary for bone health.

Nori and Rice

  • 3 sheets nori paper
  • 1 cup rice cooked

Salmon

  • 1/2 lb salmon filet remove skin and cube
  • 1 Tbsp olive oil
  • 1.5 tsp sesame oil toasted
  • 1.5 tsp tamari
  • 1.5 tsp rice wine vinegar
  • 1.5 tsp honey
  • 1.5 tsp ginger ground
  • 2 cloves garlic
  • 2 scallions diced
  • 1.5 tsp sesame seeds black preferred

Glaze

  • 1 Tbsp sesame oil toasted
  • 2 Tbsp honey
  • 2 tsp tamari
  • 1 tsp ginger ground
  • 1 tsp sesame seeds black preferred

Instructions
 

  • Preheat oven to 400 degrees F
  • Cut the nori sheets into 4 equal squares
  • In a bowl, whisk the olive oil, toasted sesame oil, tamari, rice wine vinegar, honey, ginger, garlic, sesame seeds and scallions.
  • Add the cubed salmon and marinate for an hour.
  • To each cut nori sheet add 1 tbsp cooked rice. Fully cooled.
  • Move the nori square to a muffin slot, pushing down the rice.
  • Add 4-5 marinated salmon cubes to each muffin round. Fill all 6 muffin rounds.
  • Place muffin pan into the heated oven and bake for 15 minutes,
  • Whisk together all of the glaze ingredients and add some to the baked salmon for added flavor.

Roasted Brussels Sprouts, Pumfu and Protein Rice

I was craving an Asian flavor dinner using Brussels Sprouts. Roasting the Brussels Sprouts would not give me the protein I want in a meal, so I decided to add Pumfu and a new rice like protein I recently found in my local health food store. Pumfu **is a plant-based protein, made from organic pumpkin seeds. It is an amazing alternative to meat, tofu, eggs, cheese and more! It has a mild nutty taste, a firm texture and takes on flavor easily. RightRice** is a dry (shelf-stable) grain packed with the power of nutritious vegetables (lentils, chickpeas, and green peas) + rice to deliver a healthier alternative to regular rice that’s loaded with complete, plant-based protein and fiber.

Ingredients
  

  • 2 tsp sesame seed oil toasted
  • 2 TBSP Soy Sauce I used Tamari because it is Gluten Free
  • 1 TBSP Sweet Chili Sauce
  • 1 package Pumfu cut into small cubes
  • 1 package Right Rice
  • 1 lb Brussels Sprouts cut in half

Instructions
 

  • Heat the oven to 400 degrees F
  • Remove loose outer leaves, cut the Brussels Spouts in half and add to bowl
  • Cut the Pumfu into small cubes and add to bowl
  • Add the toasted sesame seed oil, tamari and sweet chili sauce to the sprouts and Pumfu and mix thoroughly. Adjust to your personal tastes and add more of or less of the sauce.
  • Add the mix into a roasting pan and spread out so it is not in layers.
  • Roast for approximately 30 minutes, stirring half way through until the sprouts are crisp and the Pumfu is nicely browned.
  • If you have an air fryer you can cook them in the fryer for approximately 20 minutes stirring often until crisp and brown.
  • While the sprouts are cooking prepare the Right Rice by following the package directions. It is easy and the "rice" is added to a pot with boiling water and then removed from the heat. It sits covered for 10-12 minutes.
  • Enjoy!

Natto Salad

Natto Salad
“Natto is a traditional Japanese comfort food made of cooked whole soybeans fermented with Bacillus subtilis bacteria. For over a thousand years, natto has been a staple food in Japan, long revered for its nutritive value and many health benefits. Today, natto remains a popular breakfast, snack or side dish, typically eaten with a bowl of rice. Ubiquitous in Japan, natto is virtually unknown elsewhere.
 Natto is a food that promotes gastrointestinal health, and is also rich in nutrients shown to support cardiovascular (nattokinase) and bone health.
 THE BEST SOURCE OF VITAMIN K2 (MK-7) - gets calcium out of your arteries and into your bones. Natto is loved for its unique flavor and aroma -- savory, umami-rich and pungent (quite similar to a deliciously stinky cheese).

  • 1 small Cucumber organic- diced
  • 3 tbsp Natto New York organic or Rhapsody Natto

Asian Dressing

  • 1/4 cup Tamari or Coconut Aminos
  • 2 tbsp Sesame seed oil toasted
  • 1/4 cup Rice wine vinegar
  • 1/4 cup Olive oil
  • 1 tbsp Maple syrup

Instructions
 

Salad

  • Prepare the rice. 1 cup is added to 1 3/4 cups water. Bring to a boil covered and then reduce heat to a simmer for 50 minutes.
  • Wakame - place in 1/2 cup water and let sit for 10 minutes until softened
  • Cucumber - diced
  • Place rice, wakame and cucumber into a small bowl.
  • Add the natto and dress with the Asian Dressing. Mix and enjoy.

Asian Dressing

  • Place ingredients in a jar and shake well until fully dissolved.
  • Keep for up to 3 weeks, in the refrigerator. Bring to room temperature and shake well before use.
