Miso Soup

Miso (pronounced mee-so) is a delicious all purpose, high-protein seasoning which has played a major role in Japanese culture and cuisine for centuries.  It’s most often made from a combination of soybeans, cultured grain, and sea salt by a unique, double fermentation process, which was elevated to a state of fine craftsmanship in traditional Japan. Because of it’s popularity, miso now comes in non-soy versions.  My favorite brand is South River Miso. 
From South River: South River Miso is technically not a perishable food, and we are not required to put an expiration date on our product. Whether opened or unopened, South River Miso will keep almost indefinitely – even for years. Indeed, we have kept some miso for as long as 20 years without spoilage, even without refrigeration.
Miso cannot be added to boiling water as the good bacteria will die off.

Equipment

  • 1 cooking pot
  • 1 cutting board
  • 1 knife

Ingredients
  

  • 5 cups water
  • 2 tbsp wakame flakes (sea vegetables)
  • 1 cup greens chopped (kale, collards, spinach)
  • 2 tsp miso to taste
  • 1 small onion thinly sliced into half moons
  • 4 medium crimini mushrooms thinly sliced
  • 1 small carrot diced
  • 1 tbsp olive oil
  • 1/2 cup tempeh
  • 1/2 can black beans drained
  • 1/2 cup chicken breast cooked and diced

Instructions
 

  • Into medium sized pot add olive oil, sliced onions, carrots and mushrooms cook on medium heat until soft.
  • If using chicken or tempeh add now.
  • Add chopped green vegetables.
  • Add water and wakame and bring to a low boil.
  • If using black beans add now cook for 5 minutes
  • To blend flavors remove from heat ladle a small amount of soup broth into a small cup
  • Add 1-2 teaspoons of miso to broth to your desired taste
