Asian Slaw

  • 1 cutting board
  • 1 box grater
  • 1 Food Processor this is an option, especially if making a large batch
  • 1 bowl

Ingredients
  

Salad

  • 2 cups green cabbage shredded
  • 1 cup red cabbage shredded
  • 1 cup carrots shredded
  • 1 red bell pepper thinly sliced
  • 3 green onions sliced
  • 1 apple julienne
  • 1 tbsp sesame seeds optional
  • 2 tbsp pumpkin seeds roasted, optional

Dressing

  • 3 tbsp rice wine vinegar
  • 2 tbsp tamari
  • 1 tbsp maple syrup
  • 2 tbsp sesame seed oil toasted
  • 1 tsp ginger grated

Instructions
 

  • In a large bowl, combine all the slaw vegetables.
  • In a small bowl, whisk together all dressing ingredients until smooth or use a glass jar and shake until well blended.
  • Pour dressing over the slaw and toss well to combine. Let sit for at least 10 minutes before serving to allow flavors to meld. Garnish with sesame seeds and pumpkin seeds if using.
