"Vegetarian" Tuna Salad

A hearty plant-based twist on classic tuna salad: mashed lentils and chickpeas stand in for the fish, giving a similar flaky-yet-tender texture and satisfying protein punch. Ingredients
  

  • 1 can chickpeas Eden or Westbrae Organic Garbanzo Beans
  • 1 can lentils Eden or Westbrae Organic Lentils
  • 2 tbsp mayonnaise Primal Kitchen Chipotle Lime Mayonnaise
  • 1/4 cup celery diced
  • 1/4 cup dill pickles diced
  • 1 tsp fresh dill 1/2 tsp dried dill

Instructions
 

  • Open lentil and chickpea cans, rinse and drain
  • Place into bowl and mash untill the texture looks like tuna and the chickpeas are fully smashed
  • Add the mayo, pickles, celery and salt and blend
  • Serve on crackers, make a sandwich, or scoop onto an endive leaf or lettuce wrap.

Ingredients
  

  • 3 tbsp olive oil
  • 1 bunch asparagus tough ends removed
  • 8 cloves garlic
  • 1/2 onion sliced
  • 2 cups stinging nettles fresh or 1 cup dried stinging nettles
  • 1.5 quarts vegetable broth
  • salt and pepper to taste
  • fresh chives optional for garnish
  • asparagus tips optional steamed for garnish
  • yogurt optional for garnish
  • 1/4 cup cashews optional for creaminess
  • 2 tbsp nutritional yeast optional for umami flavor

Instructions
 

  • Pre-heat the oven to 425 degrees.
  • Toss the asparagus, garlic cloves and onion with 3 TB olive oil and sprinkle with salt and pepper.
  • Roast in at 425 degree oven for 25 minutes.
  • If using fresh stinging nettles add them to a soup pot with 2 tbsp olive oil and cook for 2-3 minutes to wilt and remove the sting. If using dried stinging nettles skip this step and add it along with the broth, asparagus, garlic and onion.
  • Add the vegetable broth, roasted asparagus, garlic and onion and bring to a simmer. If using dried stinging nettles add it now.
  • Use either an immersion blender or a regular blender to puree the soup until creamy. For a creamier soup you can add 1/4 cup of cashews while bending.
  • Garnish your bowl of soup with a dollop of yogurt, or stir in some fresh raw cream or coconut milk. Fresh chopped chives or asparagus tips are great too.

Notes

Stinging nettle can be used in many of the same ways as spinach, kale, or other leafy greens once they are cooked or dried. The fresh plant has tiny hairs that can sting the skin, so careful handling is important before preparation.
Stinging nettles has a moderate amount of oxalates. If this is a concern you can lower the impact by adding yogurt or another dairy product to the soup.

How to Handle Fresh Nettles

  • Wear gloves when harvesting or washing fresh nettles.
  • Use scissors or kitchen shears to trim the leaves and tender tops.
  • Avoid older tough stems, which can become fibrous.

How to Remove the Sting

Cooking, blanching, drying, or steeping nettles neutralizes the stinging hairs.
Common methods:
  • Blanching: Boil for 1–2 minutes, then drain.
  • Sautéing: Cook in a pan until wilted.
  • Roasting: Add to soups or roasted vegetable dishes.
  • Drying: Use dried nettles for tea or seasoning.

Safety Notes

  • Always cook or dry fresh nettles before eating.
  • Avoid harvesting from roadsides or areas treated with pesticides.
  • People taking blood thinners, blood pressure medications, or diuretics should speak with a healthcare provider before consuming large amounts regularly.

This is my go to vibrant kale salad. Kale is a nutrition superstar due to the amounts of vitaminsA, K, B6 and C, calcium, potassium, copper and manganese it contains. One cup of raw kale has just 33 calories and only 7 grams of carbohydrate. So, it’s a very diabetes-friendly/weight-friendly vegetable. Kale is a member of the cruciferous vegetable family along with cauliflower, Brussels sprouts, cabbage, broccoli, collard greens, kohlrabi, rutabaga, turnips and bok choy.

Kale Salad

  • 4 cups lacinato kale
  • 3/4 cups pine nuts
  • 3/4 cups currants or raisins, dried cranberries
  • 1/4 cup Parmigiano Reggiano small dice (optional)

Lemon Garlic Dressing

  • 2 Lemons ~1/4 cups juiced
  • 1/2 tbsp Sea Salt Himalayan
  • 10 tbsp Olive Oil
  • 2 cloves garlic finely diced

Instructions
 

Kale Salad

  • Wash kale and dry
  • Remove the center stgem from the kale
  • Chiffonade the kale: cut into thin strips and then cut the strips into smaller pieces
  • Add currents and pine nuts
  • Add Parmigiano Reggiano, if using

Lemon Garlic Dressing

  • Macerate the salt and garlic in a mortar and pestle and place into a glass jar
  • Add the lemon juice and the olive oil to the jar with a lid
  • Shake the jar vigorously
  • Add the dressing to the salad
  • Refrigerate any leftover dressing to use on other salads, steamed vegetables or as a dip for artichokes.

Ingredients
  

  • 2 collard leaves large, organic
  • 1 avocado sliced
  • 2 radishes sliced
  • 1 carrot shredded
  • 1 red pepper sliced
  • 1 small cucumber sliced
  • 1 apple sliced
  • 2 tbsp pumpkin seeds dry roasted

Instructions
 

  • Remove the collard leaves from the bunch.
  • Place leaves flat (rough side up) on a cutting board and gently glide a sharp paring knife across the length of the stem, shaving it down to the same thickness as the rest of the leaf.
    Do this for each leaf being careful not to nick or tear the leaf with the tip of your knife.
  • Place the collard leaves into a bath of hot water for a 1 minute or 2 until the leaves are softer and will roll easily.
  • Dry the leaves completely and add your ingredients to the center of the collard leaf.
  • Fold in the sides of the collards and completely roll it up into a comoact package.
  • Cut the roll up in half or eat it whole. The second wrap can be stored in the refrigerator and eaten the next day.

Miso Soup

Miso (pronounced mee-so) is a delicious all purpose, high-protein seasoning which has played a major role in Japanese culture and cuisine for centuries.  It’s most often made from a combination of soybeans, cultured grain, and sea salt by a unique, double fermentation process, which was elevated to a state of fine craftsmanship in traditional Japan. Because of it’s popularity, miso now comes in non-soy versions.  My favorite brand is South River Miso. 
From South River: South River Miso is technically not a perishable food, and we are not required to put an expiration date on our product. Whether opened or unopened, South River Miso will keep almost indefinitely – even for years. Indeed, we have kept some miso for as long as 20 years without spoilage, even without refrigeration.
Miso cannot be added to boiling water as the good bacteria will die off.

  • 2 tbsp wakame flakes (sea vegetables)
  • 1 cup greens chopped (kale, collards, spinach)
  • 2 tsp miso to taste
  • 1 small onion thinly sliced into half moons
  • 4 medium crimini mushrooms thinly sliced
  • 1 small carrot diced
  • 1 tbsp olive oil
  • 1/2 cup tempeh
  • 1/2 can black beans drained
  • 1/2 cup chicken breast cooked and diced

Instructions
 

  • Into medium sized pot add olive oil, sliced onions, carrots and mushrooms cook on medium heat until soft.
  • If using chicken or tempeh add now.
  • Add chopped green vegetables.
  • Add water and wakame and bring to a low boil.
  • If using black beans add now cook for 5 minutes
  • To blend flavors remove from heat ladle a small amount of soup broth into a small cup
  • Add 1-2 teaspoons of miso to broth to your desired taste

Salad

  • 2 cups green cabbage shredded
  • 1 cup red cabbage shredded
  • 1 cup carrots shredded
  • 1 red bell pepper thinly sliced
  • 3 green onions sliced
  • 1 apple julienne
  • 1 tbsp sesame seeds optional
  • 2 tbsp pumpkin seeds roasted, optional

Dressing

  • 3 tbsp rice wine vinegar
  • 2 tbsp tamari
  • 1 tbsp maple syrup
  • 2 tbsp sesame seed oil toasted
  • 1 tsp ginger grated

Instructions
 

  • In a large bowl, combine all the slaw vegetables.
  • In a small bowl, whisk together all dressing ingredients until smooth or use a glass jar and shake until well blended.
  • Pour dressing over the slaw and toss well to combine. Let sit for at least 10 minutes before serving to allow flavors to meld. Garnish with sesame seeds and pumpkin seeds if using.

Sardine Patties

Sardine Patties are a simple, protein-packed dish made by combining canned sardines with breadcrumbs, eggs, herbs, and seasonings, then shaping into patties and baking until golden.   • 1 tbsp avocado oil or olive oil
  • 3 cans sardines skin on and bones; in water or oil
  • 1/2 cup white onion finely diced
  • 1 tbsp ginger freshly grated or 1 teaspoon dried powdered ginger
  • 1/4 tsp smoked paprika
  • 1/4 cup fresh basil finely chopped, loosely packed
  • 1/4 tsp black pepper ground
  • 1 tsp salt
  • 2 tsp mustard Dijon
  • 1/2 tsp apple cider vinegar
  • 2 eggs or egg substitute
  • 3/4 cup panko bread crumbs or almond meal

Instructions
 

  • Preheat oven to 375° F. Cover a baking sheets in parchment paper and grease with avocado or olive oil.
  • Strain water/oil from sardines, then mash with a fork in a large mixing bowl.
  • Add the white onion, ginger, smoked paprika, basil, ground pepper, sea salt, Dijon, and apple cider vinegar to the sardines and mix well.
  • Beat the eggs in a separate bowl, then add eggs and almond flour or panko to the fish mixture and mix together.
  • Shape into 8 patties. Place on a parchment-lined plate, cover, and refrigerate for at least 30 minutes.
  • Place sardine cakes onto the oiled parchment sheet, evenly spaced.
  • Bake sardine cakes for 10 minutes on top rack of oven. Turn the cakes and bake for another 10 minutes, until cakes are golden brown.

Ingredients
  

  • 1 chicken whole, organic (about 3–4 lbs)
  • 3 carrots chopped
  • 3 celery stalks chopped
  • 1 onion peeled and halved
  • 4 cloves garlic smashed
  • 1 bay leaf
  • 1 tbsp fresh thyme or 1 tsp dried
  • 1 tbsp fresh parsley chopped
  • 1 dash salt to taste
  • 1 dash pepper to taste
  • 12 cups filtered water

Instructions
 

  • Place the chicken in a large stockpot and cover with filtered water.
  • Add the carrots, celery, onion, garlic, bay leaf, and thyme.
  • Bring to a boil, then reduce heat and simmer for 1.5–2 hours, skimming foam if needed.
  • To remove excess fat, cool the soup in the refrigerator for a couple of hours and skim off the excess fat.
  • Remove the chicken, shred the meat, and return it to the pot.
  • Enjoy!
