Ingredients
  

Sardines

  • 1 can sardines with bones and skin- drained
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1/4 tbsp cumin
  • 1/4 tsp smoked paprika
  • 1/4 tsp chili powder
  • 1/2 cup salsa
  • 1/4 cup mango chopped and added to the salsa

Avocado Dressing

  • 1/2 avocado
  • 1/4 cup Greek yogurt
  • 1 1/2 tbsp lime juice
  • 1/8 tsp salt
  • 1/4 cup cilantro

Instructions
 

Sardines

  • Mix together the sardines, cumin, chili powder, smoked paprika, lime juice and salt.

Avocado Sauce

  • Add the Greek yogurt, lime juice, cilantro and salt
  • Blend until smooth

Ingredients
  

Salad

  • 1 head broccoli chopped - if you don't like raw, blanch for 10 -20 seconds first, then cool in ice bath
  • 1 can chickpeas 15 oz - rinsed and drained - we use Eden Organic
  • 1 cup apples diced- with skin
  • 1 cup carrots shredded
  • 1/3 cup green onions diced
  • 1/3 cup raisins or cranberries
  • 1/3 cup pecans or walnuts - chopped

Dressing

  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1 tsp maple syrup or honey or other sweetener
  • 1 tsp mustard brown or Dijon
  • 1/4 avocado
  • dash salt
  • dash pepper

Instructions
 

  • In a large bowl, add the chopped broccoli, chickpeas, apples, carrots, green onions, cranberries, and pecans.
  • Make the dressing by mixing together the vinegar, olive oil, mustard, maple syrup, salt and pepper. If using the avocado to make a creamy dressing, place all ingredients into a blender and blend until smooth.
  • Pour the dressing over the salad and toss to combine.

Salad

  • 3/4 cups green peas frozen, thawed
  • 1/2 bunch asparagus blanched, cut into pieces
  • 2 cups sugar snap peas
  • 2.5 cups spring mix or baby kale or other greens
  • 1/4 cup mint fresh, torn
  • 3 scallions green part, cut in small pieces
  • 1/2 avocado cubed
  • 1/4 cup pistachio nuts

Dressing

  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/4 avocado

Instructions
 

  • Place the dressing ingredients into a blender and blend until creamy. Pour into a glass mason jar so extra can be saved for later.
  • Put the frozen peas in a colander and rinse under warm water to defrost. Set aside to drain. Blot with a towel, if necessary, to remove excess water.
  • Place trimmed, cut asparagus in a pot of boiling water. Blanch for 1 minute until color brightens, but asparagus is still firm. Remove from boiling water and put in an ice water bath to stop the cooking process. Drain and blot dry.
  • Leave sugar snap peas raw. Then angle-cut sugar snap pods in halves or thirds, depending on size.
  • You may do steps 1-4 up to two days in advance. You can then dress the amount of salad as needed. If not using all the salad at one meal, only dress what you are eating. Save the rest and dress just before serving.
  • Combine the peas, asparagus, snap peas, green onions, with the remaining salad ingredients in a large bowl. Drizzle on the salad dressing, toss to combine and serve topped with pistachio nuts.

  • Place on unheated rack of a foil-lined broiler pan. Broil 3 to 4 inches from heat for 15 to 18 minutes for medium (160 degrees F), turning once halfway through broiling.
  • Thinly slice steak diagonally across grain. If desired, sprinkle with additional fresh oregano.

  • 1 tbsp olive oil
  • 1/2 onion large, diced
  • 2 carrots medium, diced, peeled if not organic
  • 2 celery stalks diced
  • 3/4 tsp salt
  • 2 tbsp tomato paste
  • 4 cloves garlic minced
  • 1 tbsp rosemary chopped (1 tsp if using dried )
  • 1 tsp basil dried
  • 3 cans white beans cannellini (15 oz) drained and rinsed
  • 1 can diced tomatoes (15 oz)
  • 3 cups vegetable broth
  • 4 cups kale chopped
  • 1 tbsp balsamic vinegar
  • 3/4 cup coconut milk full fat
  • 2 tbsp nutritional yeast
  • 1/2 tsp red pepper flakes or Berbere spice

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the onion, carrots, celery, 1/4 teaspoon salt, and a few cracks of fresh black pepper, and cook (stirring occasionally) until softened — about 5 minutes.
  • Add the tomato paste, garlic, rosemary (or thyme), and basil and cook for 1 minute, until fragrant.
  • Add the broth, beans, tomatoes. Scrape up any browned bits on the bottom of the pan and bring to a simmer. Reduce the heat to low, cover, and simmer for 15 minutes, until the veggies are fork-tender and the flavors are well developed.
  • Use an immersion blender to purée the soup in short bursts, only puréeing part of the soup (mostly the beans) and leaving plenty of whole pieces of vegetables.
  • Return the soup to a light simmer. Then add the kale, cover the pot and cook for another 5 minutes. Once the kale is softened, uncover the pot and stir in the vinegar and coconut milk.
  • Taste the soup and adjust the seasoning to the desired flavor.

Ingredients
  

  • 4 cod fillets
  • 1 bell pepper diced (red, orange or yellow)
  • 1 cup cherry tomatoes halved
  • 5 large green olives diced
  • 8 small black olives diced
  • 2 large garlic cloves
  • 1/4 cup parsley chopped
  • 2 TBSP olive oil
  • 1 lemon juiced
  • 1 dash salt to taste
  • 1 dash pepper to taste
  • 2 TBSP basil optional for garnish

Instructions
 

  • Preheat oven to 400F.
  •   Place fish fillets in a large baking dish.
  •  In a large bowl, toss together the peppers, tomatoes, olives, garlic, parsley, olive oil, lemon juice, salt, and pepper.
  • Pour vegetable mixture over top of fish fillets. Spread out evenly so that the fish is visible and the vegetable mixture surrounds it.
    Season fish with additional salt and pepper.
  •  Place baking dish in the oven for about 12-15 minutes until firm.
  •  Remove from oven and garnish with fresh basil.

Notes

  • Leftover fish should be eaten within 1-3 days of cooking
  • Store in an airtight container in the fridge
  • Leftovers can easily be reheated in the microwave or in the oven!

Kitcheri, a relatively simple stew of basmati rice and yellow split mung beans, is a staple in Ayurvedic* cooking. It is delicious, easy to digest, nourishing and yet light. It is commonly the primary dish served during cleansing and rejuvenation programs (panchakarma). It is a great choice when you are ill, recovering from an illness, feeling a bit “off” ~ or anytime you just feel like it!
Profound healing can occur simply by adding kitcheri to one’s diet on a regular basis. It is suitable for all body types and can be made in an endless number of variations. It is quite affordable, and the ingredients can always be available in your kitchen. Kitcheri can be served by itself or with vegetables, and the consistency may be like a soup or more like a rice dish or casserole, depending on personal preference and one’s digestive capability.

Ingredients
  

  • 1/2 cup basmati rice
  • 1/2 cup split mung beans (yellow mung dhal)
  • 2 tbsp ghee (clarified butter) or coconut oil
  • 1 tsp cumin seed (whole)
  • 1 tsp black mustard seed (whole)
  • 1 tsp fennel seed (ground or seeds)
  • 1 tsp turmeric (ground)
  • 1 tsp coriander
  • 1 tsp sea salt or to taste
  • 2 tbsp fresh ginger (grated or finely chopped)
  • 1 pinch asafoetida (hing) helps relieve gas
  • 1 pinch black pepper
  • 5 cups water
  • 4 cups vegetables 3-4 cups vegetables, chopped (amount may vary, depends on vegetable). Ideally, choose seasonal vegetables.

Instructions
 

  • Soak the mung beans for a few hours to overnight for increased ease of digestion.
  • Heat the ghee or oil in a large, deep saucepan and add the mustard seeds.
  • When the mustard seeds pop, add all remaining spices except salt.
  • Sauté for a minute or so, then add the split mung beans and rice. Stir until all foods are flavored and colored with the spice mixture.
  • Add water and bring to a boil.
  • Cover, reduce heat to a simmer and let cook for about 20 minutes or until the beans are completely soft. Then add the salt.
  • Add more water if you prefer a more soupy consistency.
  • Add your chosen vegetables during the last 15 minutes of your cooking time.
  • If desired, serve with grated coconut, fresh lime, chopped cilantro, plain yogurt, ghee, and/or sesame seeds

  • 2.5 cups chicken cubed (roasted breasts or thighs) or use a pre-cooked rotisserie chicken to save time and make this recipe even easier.
  • 1/2 cup red onion diced (1/4 large onion)
  • 1/2 cup celery diced (about 2 stalks)
  • 1/2 cup cranberries dried

Dressing

  • 1/3 cup olive oil
  • 2 TBSP apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 2.5 TBSP dijon mustard
  • 2 TBSP honey

Instructions
 

Chicken

  • If using a rotisserie chicken, dice the chicken. If roasting breasts or thighs, season with salt and pepper and bake at 450 degrees for about 15-18 minutes until chicken is completely cooked (internal temp of 165 degrees F).
  • In a large mixing bowl add the diced cooked chicken, red onion, celery, and cranberries.

Dressing

  • In a mason jar (or bowl) shake or whisk together olive oil, apple cider vinegar, salt, pepper, garlic powder, paprika, mustard and honey.
