Rainbow Stir Fry

Here is one of my favorite make once eat three times recipes. Eating from the rainbow is so easy when you make this chicken stir fry.  Stir fry dinners are the way to go. You get your protein, your veggies, everything in one skillet and in no time your meal is ready. I like to prep my chicken and veggies earlier in the day and when I am ready for my meal all I have to do is cook it in my skillet. This is called mise en place that means "putting in place" or "gathering". In cooking, it refers to the organization and discipline of a good chef, who prepares and organizes all their ingredients and supplies before starting to cook.

Ingredients
  

Stir Fry

  • 1 lb chicken breasts skinless, boneless, cut into 1 inch pieces - optional for vegetarians or vegans use tempeh or pumfu as your protein source
  • 2 tbsp olive oil
  • 1.5 cups broccoli florets
  • 1/2 yellow pepper cut into one inch pieces
  • 1/2 red pepper cut into one inch pieces
  • 1/2 cup carrots julienne
  • 1 zucchini julienne
  • 1/2 cup sugar snap peas sliced
  • 1/2 onion cut into half moons
  • 1 dash pepper to taste
  • 1 dash salt to taste

Sauce

  • 1/4 cup tamari low sodium
  • 1/8 cup sesame seed oil toasted
  • 1/8 cup olive oil
  • 1/8 cup maple syrup
  • 2 tsp ginger minced
  • 2 cloves garlic minced

Instructions
 

Stir Fry

  • Add 1 tablespoon olive oil to the the skillet or wok and cook over medium heat
  • Add the chicken and season with salt and pepper
  • Cook for about 3-5 minutes until cooked through. Remove chicken from the skillet and set aside.
  • Add the onions, broccoli, bell peppers, carrots, zucchini and snap peas to the skillet, stirring occasionally, and cook until crisp tender, about 5 minutes.
  • Add chicken back into the pan and stir to combine.
  • Add the sauce to the pan and pour over the chicken and vegetables and stir to combine.
  • Cook for about one minute and serve on rice if desired.

Sauce

  • Add all of the ingredients into a jar and shake until evenly mixed

Vegan "Tuna" Salad

Ingredients
  

  • 1 15 oz can chickpeas drained and rinnsed
  • 2 tbsp onion minced
  • 2 ribs celery finely diced
  • 1/3 cup mayonaise vegan. I like Primal Kitchen Chipotle Mayo
  • 2 tsp Dijon mustard
  • 2 tbsp dill pickles chopped
  • 1/2 lemon juiced
  • 1 dash salt to taste
  • 1 dash pepper to taste
  • 1 tsp dill
  • 1 tsp dulce optional for fishier taste

Instructions
 

  • After rinsing your chickpeas, make sure to dry as much of the water as you can.
  • Add the chickpeas into a bowl and mash with the back of a fork or a potato masher.
  • Add remaining ingredients and stir to combine.
  • Add salt and pepper to taste.
  • Store in an airtight container in the fridge for up to 5 days.

Ingredients
  

  • 2 15 oz chickpeas canned, drained and rinsed
  • 6 cups butternut squash honey nut squash or delicata squash or a mix of all. Peeled, trimmed, seeded and cut into 1 inch cubes
  • 1 3/4 tsp Ras el Hanout or Berbere or garam masala
  • 1 1/4 tsp salt
  • 5 sprigs thyme
  • 3 tbsp olive oil
  • 1 red onion small, thinly sliced
  • 1 tsp rice wine vinegar or apple cider vinegar
  • 1/2 cup cilantro or parsley if you prefer
  • 2 tbsp honey if you like your food with some extra kick use hot honey
  • 1/2 cup yogurt

Instructions
 

  • Heat oven to 425 degrees.
  • Line one sheet pan with parchment paper.
  • Drain and rinse the chickpeas and rub them dry and let them continue drying on paper towels.
  • Place the squash on the parchment paper-lined pan and and 2 tablespoons oil. Spread squash into an even layer and roast for 20minutes.
  • Combine the chickpeas in a medium bowl with red onion, remaining ¾ teaspoon Ras el hanout or berbere , ¾ teaspoon salt and 1tablespoon oil, and toss until well combined.
  • Add the mixture to the pan of squash and stir everything well. Continue roasting for another 30 minutes, tossing the mixture halfway through, until the squash is golden brown and tender, and the chickpeas and onions are slightly crispy.
  • Remove the pan from the oven, sprinkle vinegar and herbs on top and toss. Drizzle with honey and toss again to combine.
  • Taste and season with more salt, more honey and vinegar to taste. Serve with spoonfuls of yogurt.

Bone Bliss Parfait

I loved the idea of making a parfait to enjoy at breakfast or as a snack. Plain, unsweetened yogurt is one of the simplest foods for bone health and it’s so versatile.  For maximum bone benefits, I’m adding my favorite fruit for bone health prunes. I am swirling my prune puree into the yogurt and then topping it with walnuts and wild blueberries.
Prune purée is a multi-talented baking substitute. Use it to replace sugar, eggs, or fat. Use it in baking sweets and well as savory with chicken or turkey.The antioxidants and anti-inflammatory properties of prunes may help prevent bone loss and aid in maintaining healthy bone density and formation, according to clinical studies. “Animal and cell studies suggest that dried plums and/or their extracts enhance bone formation and inhibit bone resorption through their actions on cell signaling pathways that influence osteoblast and osteoclast differentiation.” 
Yogurt provides almost every nutrient that your body needs. It’s especially high in calcium, B vitamins, and trace minerals.

  • 1 tbsp prune puree "recipe below"
  • 2 tsp wild blueberries
  • 1/4 cup walnuts chopped

Instructions
 

  • Add 1/4 of the yogurt to a parfait glass.
  • Add 1 tsp of the prune puree on tip of the yogurt.
  • Add another layer of yogurt and continue alternating to almost the top of the glass.
  • Top with the wild blueberries and walnuts.

Bok Choy with Avocado Dressing - Vegan

Bok choy is an excellent choice for bone health due to its combination of low oxalate content and high vitamin K levels.
Low Oxalate Content: Oxalates are naturally occurring compounds found in various foods, and they can bind to calcium in the body and impact calcium absorption. Bok choy is considered a low-oxalate leafy green vegetable compared to high-oxalate foods like spinach and Swiss chard. This makes bok choy a safer choice for individuals prone to kidney stones or those who need to manage their oxalate intake.
High in Vitamin K: Bok choy is rich in vitamin K, particularly vitamin K1 (phylloquinone). Vitamin K plays a critical role in bone health by helping to regulate calcium metabolism.   • 1 Bok choy Either Baby Bok choy or full size will work.
  • 1/3 cup Olive Oil
  • 1/3 cup Apple Cider Vinegar or lemon juice
  • 1 tsp Mustard Dijon
  • 1 tsp Maple Syrup
  • 1/4 Avocado
  • 1 dash salt
  • 1 dash pepper

Instructions
 

  • Wash and dry the Bok choy and cut into bite size pieces.
  • Prepare the dressing by placing the olive oil, apple cider vinegar, mustard, maple syrup, avocado and salt and pepper into a blender.
  • Blend until creamy - approximately 15 seconds
  • Pour the dressing over the Bok Choy and enjoy!
  • Leftover dressing can be stored in the refrigerator for 3-5 days and used on any salad, cooked string beans, asparagus, etc. If dressing is too thick you can thin iw with a little water.

Sweet and Sour Brisket

Today I chose to share with you the recipe for Sweet and Sour Brisket we just made for a Hanukah dinner. The protein content is wonderful as is the taste of this brisket!
Brisket has a long history in the United States. Brisket is the meat of choice for slow smoking barbecue in Texas, and is often considered the "National Dish of Texas".
In Britain it is generally not smoked, but is one of a number of low-cost cuts which historically may have been boiled with root vegetables and mild spices, or cooked very slowly in a lidded casserole with gravy.
In Germany, brisket is braised in dark beer and cooked with celery, carrots, onions, bay leaf and thyme.
In traditional Jewish cooking, brisket, is most often braised as a pot roast, especially as a holiday main course and on the Sabbath..
In Hong Kong, it is cooked with spices over low heat until tender, and is commonly served with noodles in soup or curry.
In Korean traditionally it is first boiled at low temperature with aromatic vegetables, then pressed with a heavy object in a container full of a soy sauce-based marinade.
It is a common cut of meat used in Vietnamese phở soup.
In Italian cuisine brisket is used to prepare bollito misto, a typical Northern Italy recipe.
In Mexican cooking brisket is used to prepare suadero tacos.

Ingredients
  

  • 3 lb brisket first cut
  • 1/2 onion peeled and quartered
  • 6 inch ginger fresh, peeled and cut into chunks
  • 3 cloves garlic
  • 1/2 cup ketchup
  • 1/4 cup red wine dry
  • 1/8 cup apple cider vinegar
  • 1/8 cup tamari
  • 1/8 cup maple syrup
  • 1/8 cup Dijon mustard
  • 1.5 tsp black pepper
  • 1/8 tsp cloves ground
  • 3/4 cup ginger ale
  • 1/4 cup olive oil

Instructions
 

  • Let meat stand at room temperature for 30 minutes before cooking. Heat oven to 325
  • Place everything but the soda, olive oil and brisket into a blender, and process until smooth. Pour the mixture into a large bowl and whisk in soda and olive oil.
  • Place brisket, fat side up, into a heavy baking pan just large enough to hold it, and pour sauce over it. Cover tightly and bake for 3 hours. Turn brisket over, cover pan, and bake for 2-3 hours, covered, at 325 degrees or until fork-tender. Cool, cover brisket and refrigerate overnight in cooking pan.
  • Place brisket, fat side up, into a heavy baking pan just large enough to hold it, and pour sauce over it. Cover tightly and bake for 3 hours. Turn brisket over, cover pan, and bake for 2-3 hours, covered, until fork-tender. Cool, cover brisket and refrigerate overnight in cooking pan.
  • The next day, transfer brisket to a cutting board, cut off fat and slice with a sharp knife against grain to desired thickness. Set meat aside. Remove any congealed fat from sauce and bring to a boil on top of stove.
  • Heat oven to 350 degrees. Taste sauce to see if it needs reducing. If so, boil it down for a few minutes or as needed. Return meat to sauce and warm in oven for 20 minutes. Serve warm.

Sardine Stew: High Calcium, High Protein

Sardines are an inexpensive source of protein and healthy fats. They are available fresh, frozen, and canned. Always eat your sardines with skin and bones to provide the most calcium. and protein.
Unlike other omega-3-rich fish, they are low in mercury and other containments. They are small in size and have a short life span which means they don’t have as long to accumulate mercury as larger fish like tuna. They also eat plankton which is relatively low in mercury.

  • 1 onion smal, diced
  • 1 clove garlic diced
  • 1 can diced tomatoes
  • 1 can cannelloni beans
  • 2 cups chicken stock
  • 2 cans sardines with skin and bones
  • 1 tbsp paprika
  • 1 tbsp basil dried
  • 2 cups kale sliced into pieces
  • 2 tbsp lemon juice

Instructions
 

  • Sauté onions and garlic in saucepan with extra virgin olive oil over medium heat.
  • After 5 minutes, add tomatoes, canned beans, chicken stock and kale. Mix together and bring to a boil.
  • Add paprika and basil.
  • Add sardines to the soup and lower temperature to a simmer for 10 minutes.
  • Add lemon juice and season with salt and pepper to taste.

Baked Oatmeal

Here is a great make ahead breakfast for you or for company. I used wild blueberries in this recipe which you can buy frozen. Wild blueberries are frozen within 24 hours of harvest to lock in their taste and nutrition. Freezing increases the concentration of anthocyanins, a type of antioxidant, in blueberries. Wild blueberries also have 72% more fiber, 33% more anthocyanins, and twice as many antioxidants as regular blueberries.

Ingredients
  

  • 2 bananas ripe
  • 1.5 cups wild blueberries frozen
  • 1 cup rolled oats
  • 1/8 cup maple syrup
  • 1/2 cup walnuts chopped
  • 1/2 tsp baking powder
  • 3/4 tsp cinnamon
  • pinch salt
  • 1 cup milk fat free whole milk or vegan milks
  • 1 egg large
  • 1 tsp vanilla

Instructions
 

  • Preheat the oven to 375F.  Lightly spray a 8 x 8" or 9 x 9" ceramic baking dish with cooking spray; set asid.
  • Arrange the banana slices in a single layer on the bottom of the ceramic dish.
  • Sprinkle half of the blueberries (thaw the blueberries and drain well before using) over the bananas, 1/4 tsp of the cinnamon, 1 tbsp of the maple syrup and cover with foil.
  • Meanwhile, in a medium bowl, combine the oats, half of nuts, baking powder, remaining cinnamon, and salt; stir together.
  • In a separate bowl, whisk together the remaining maple syrup, milk, egg, and vanilla extract.
  • Remove the bananas from the oven, then pour the oat mixture over the bananas and blueberries.
  • Pour the milk mixture over the oats, making sure to distribute the mixture as evenly as possible over the oats.
  • Sprinkle the remaining blueberries and walnuts over the the top.
  • Bake for 30 minutes until the oatmeal has set. Serve warm from the oven. Cut in 6 pieces.
  • Oatmeal can be stored in the refrigerator for 3 days and heated again to enjoy.
