"Vegetarian" Tuna Salad

"Vegetarian" Tuna Salad

A hearty plant-based twist on classic tuna salad: mashed lentils and chickpeas stand in for the fish, giving a similar flaky-yet-tender texture and satisfying protein punch. Chipotle mayo adds smoky heat and creaminess, while chopped pickles and fresh dill bring the same briny, herbaceous brightness you'd expect from a traditional tuna salad. Great scooped onto crackers, piled into a sandwich, served over greens, or scooped onto an endive leaf.

Kale Salad

This is my go to vibrant kale salad. Kale is a nutrition superstar due to the amounts of vitaminsA, K, B6 and C, calcium, potassium, copper and manganese it contains. One cup of raw kale has just 33 calories and only 7 grams of carbohydrate. So, it’s a very diabetes-friendly/weight-friendly vegetable. Kale is a member of the cruciferous vegetable family along with cauliflower, Brussels sprouts, cabbage, broccoli, collard greens, kohlrabi, rutabaga, turnips and bok choy.

Simple Sardine PLUS

Sardines are a highly nutrient-dense food and an efficient source of several essential nutrients. They provide significant amounts of omega-3 fatty acids (EPA and DHA), complete protein, vitamin B12, and selenium, all of which play important roles in cardiovascular health, neurological function, and cellular protection. Sardines are also notable for being affordable, widely available, and shelf-stable, making them a practical dietary choice.
When combined with whole foods such as apples, carrots, and celery, the meal is enhanced with dietary fiber, phytonutrients, and additional micronutrients that support glycemic balance, digestive health, and overall metabolic function. For reduced exposure to can-lining materials, sardines packaged in glass jars are preferred over those in metal cans.

Asian Slaw

Asian slaw salad is a crisp, refreshing dish known for its vibrant colors and bold, zesty flavors. It combines a satisfying crunch with a light, tangy dressing that balances sweetness, acidity, and a hint of savory depth. Often served chilled, it’s both energizing and versatile—perfect as a side dish or a flavorful addition to a larger meal.
This salad is naturally low in calories and saturated fat while being rich in dietary fiber, antioxidants, and vitamins that support immune health and digestion. Thanks to its raw, plant-based foundation, it also provides a variety of phytonutrients and can be a good source of vitamin C and potassium, depending on the mix. Its bright, layered textures and fresh taste make it a nourishing standout on any table.

Equipment

  • 1 bowl
  • 1 knife
  • 1 cutting board
  • 1 blender
  • 1 mason jar

Ingredients

Salad

  • 3/4 cups green peas frozen, thawed
  • 1/2 bunch asparagus blanched, cut into pieces
  • 2 cups sugar snap peas
  • 2.5 cups spring mix or baby kale or other greens
  • 1/4 cup mint fresh, torn
  • 3 scallions green part, cut in small pieces
  • 1/2 avocado cubed
  • 1/4 cup pistachio nuts

Dressing

  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/4 avocado

Instructions

  • Place the dressing ingredients into a blender and blend until creamy. Pour into a glass mason jar so extra can be saved for later.
  • Put the frozen peas in a colander and rinse under warm water to defrost. Set aside to drain. Blot with a towel, if necessary, to remove excess water.
  • Place trimmed, cut asparagus in a pot of boiling water. Blanch for 1 minute until color brightens, but asparagus is still firm. Remove from boiling water and put in an ice water bath to stop the cooking process. Drain and blot dry.
  • Leave sugar snap peas raw. Then angle-cut sugar snap pods in halves or thirds, depending on size.
  • You may do steps 1-4 up to two days in advance. You can then dress the amount of salad as needed. If not using all the salad at one meal, only dress what you are eating. Save the rest and dress just before serving.
  • Combine the peas, asparagus, snap peas, green onions, with the remaining salad ingredients in a large bowl. Drizzle on the salad dressing, toss to combine and serve topped with pistachio nuts.

Apple Broccoli Chickpea Salad

Enjoy a healthy apple broccoli salad with chickpeas, dried cranberries or raisins, pecans or walnuts, and a delightful avocado vinaigrette. This versatile dish works wonderfully as a lunch or a side salad and keeps well in the refrigerator for several days, making it perfect for leftovers. For easier digestion, I prefer to blanch the broccoli, but it can also be enjoyed raw. An added benefit is the protein from the chickpeas. Simply toss all the ingredients together in a bowl to create this delicious salad.
