Honey Mustard Chicken Salad

Ingredients
  

Chicken

  • 2.5 cups chicken cubed (roasted breasts or thighs) or use a pre-cooked rotisserie chicken to save time and make this recipe even easier.
  • 1/2 cup red onion diced (1/4 large onion)
  • 1/2 cup celery diced (about 2 stalks)
  • 1/2 cup cranberries dried

Dressing

  • 1/3 cup olive oil
  • 2 TBSP apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 2.5 TBSP dijon mustard
  • 2 TBSP honey

Instructions
 

Chicken

  • If using a rotisserie chicken, dice the chicken. If roasting breasts or thighs, season with salt and pepper and bake at 450 degrees for about 15-18 minutes until chicken is completely cooked (internal temp of 165 degrees F).
  • In a large mixing bowl add the diced cooked chicken, red onion, celery, and cranberries.

Dressing

  • In a mason jar (or bowl) shake or whisk together olive oil, apple cider vinegar, salt, pepper, garlic powder, paprika, mustard and honey.
