Cauliflower Tabbouleh

Cauliflower tabbouleh is a low-carb twist on the classic Middle Eastern parsley salad, where finely riced or grated cauliflower stands in for the traditional bulgur wheat. It keeps the dish's signature bright, herb-forward character while cutting the carbs and adding a veggie boost. It's typically served chilled or at room temperature, and works well as a side dish, a light lunch on its own, or alongside grilled chicken or fish.
Cauliflower Supports Detoxification
Cauliflower is a cruciferous vegetable. It contains compounds that help support the liver’s natural detoxification pathways, including production of enzymes involved in processing environmental toxins.

Cauliflower is an Excellent Source of Fiber

One cup provides about 2–3 grams of fiber, which helps: Support a healthy gut microbiome, Promote regular bowel movements, Improve blood sugar control, Increase satiety

Cauliflower Helps Regulate Blood Sugar

Because it’s high in fiber and low in digestible carbohydrates, cauliflower has very little impact on blood glucose, making it a good choice for people concerned about insulin resistance or diabetes.

Equipment

  • 1 Food Processor
  • 1 blender optional
  • 1 bowl
  • 1 cutting board
  • 1 knofe

Ingredients
  

  • 1 cauliflower riced
  • 2 cups parsley chopped
  • 1 cup mint chopped
  • 2 cups tomatoes diced
  • 2 cups cucumbers diced, English cucumber
  • 6 scallions diced, green and white parts

Dressing

  • 1/2 cup lemon juice juiced or pure organic bottled juice
  • 1/2 cup olive oil
  • 1-2 cloves garlic crushed
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp tahini optional, but makes a creamy dressing

Instructions
 

  • Remove the leaves off your cauliflower, and chop the head in four before placing in your food processor.
  • Blend until the cauliflower turns into a rough rice, not too small or may become mushy
  • Mix all salad ingredients including the lemon zest in a bowl, lifting gently and folding so as not to crush the tomatoes.

Dressing

  • Add dressing ingredients to a jar and shake until well combined, then pour over salad and mix lightly again. If using the tahini, place all of the ingredients into a blender and blend until creamy.
  • Pour the dressing over salad and mix lightly again.This salad even tastes great the next day.

  • Note: if you are watching your oxalate intake you can reduce the parsley (1 cup) and mint (1/2 cup) (highest in oxalates) and increase the cucumber or cauliflower.

Hummus

Hummus is a delicious spread or dip made from chickpeas, tahini, garlic, lemon, and spices. It’s commonly eaten in the Middle East and the Mediterranean. Here in the United States, you can find store-bought versions at the grocery store, but try making your own, it is easy and soooo delicious.

Equipment

  • 1 Food Processor

Ingredients
  

  • 3 cloves garlic
  • 1/4 cup lemon juice
  • 16 oz Tahini I use Trader Joe's Organic
  • 1 tbsp kosher salt
  • 1 tsp cumin ground
  • 1 1/2 cups ice water
  • 2 cans chickpeas 15 oz cans

Instructions
 

  • Place the 3 garlic cloves into a food processor and add the lemon juice
  •  Pour the tahini on top
  • Add the salt and cumin. 
  • Process until the mixture looks peanut-buttery, about 1 minute. 
  • Stream in the ice water, a little at a time, with the motor running. 
  •  Process just until the mixture is smooth and creamy and lightens to the color of dry sand.
  • Add the chickpeas and process for approximately 3 minutes until creamy.

Notes

Olive oil makes the texture of hummus luxurious. I add a little drizzle to the top of the hummus when I serve it.
In addition to the ingredients above, you can add more flavor and ingredients to your hummus. Try adding roasted red peppers for a red pepper hummus, or beets, pesto, herbs, olives, pine nuts, and extra spices such as sumac.
Enjoy with pita, gluten free crackers, celery, carrots, and other veggies. It can also be used as a sandwich spread.
This hummus keeps well in the refrigerator, covered, for about 1 week.
This recipe makes 12 generous servings and is great for parties. You can halve the recipe for a smaller amount if desired.
