Ingredients
  

  • 1 whole organic chicken (about 3–4 lbs)
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 1 onion, peeled and halved
  • 4 cloves garlic, smashed
  • 1 bay leaf
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 12 cups filtered water

Instructions
 

  • Place the chicken in a large stockpot and cover with filtered water.
  • Add the carrots, celery, onion, garlic, bay leaf, and thyme.
  • Bring to a boil, then reduce heat and simmer for 1.5–2 hours, skimming foam if needed.
  • Remove the chicken, shred the meat, and return it to the pot.
