Equipment

  • 1 knife
  • 1 cutting board
  • 1 food processor or blender

Ingredients
  

The Base

  • 2 cups tomatoes coarsely chopped
  • 2 cups watermelon coarsely chopped
  • 1/2 medium red pepper coarsely chopped
  • 2/3 cucumber peeled and cut into chunks
  • 2 scallions cut into pieces, green parts
  • 1 handful cilantro or parsley
  • 1 chili pepper seeded and minced

Finish the soup

  • 1/3 cucumber peeled and finely diced
  • 1 cup cherry tomatoes halved
  • 2 cups watermelon finely diced
  • 2 peaches finely diced and pitted
  • 1 lemon juiced
  • salt and pepper to taste
  • fresh herbs optional for garnish

Instructions
 

  •  Place the first six (base) ingredients in a food processor.
  •  Puree until fairly smooth.
  • Transfer the puree to a serving container.
  • Add the remaining ingredients (finish the soup) and stir together.
  • Cover and refrigerate for at least an hour before serving.
  •  Garnish each serving with thyme or other fresh herbs, if desired.
