Cauliflower tabbouleh is a low-carb twist on the classic Middle Eastern parsley salad, where finely riced or grated cauliflower stands in for the traditional bulgur wheat. It keeps the dish's signature bright, herb-forward character while cutting the carbs and adding a veggie boost. It's typically served chilled or at room temperature, and works well as a side dish, a light lunch on its own, or alongside grilled chicken or fish. 1/2cuplemon juicejuiced or pure organic bottled juice
1/2cupolive oil
1-2clovesgarliccrushed
3/4tspsalt
1/2tspblack pepper
1tbsptahinioptional, but makes a creamy dressing
Instructions
Remove the leaves off your cauliflower, and chop the head in four before placing in your food processor.
Blend until the cauliflower turns into a rough rice, not too small or may become mushy
Mix all salad ingredients including the lemon zest in a bowl, lifting gently and folding so as not to crush the tomatoes.
Dressing
Add dressing ingredients to a jar and shake until well combined, then pour over salad and mix lightly again. If using the tahini, place all of the ingredients into a blender and blend until creamy.
Pour the dressing over salad and mix lightly again.This salad even tastes great the next day.

Note: if you are watching your oxalate intake you can reduce the parsley (1 cup) and mint (1/2 cup) (highest in oxalates) and increase the cucumber or cauliflower.
