Cottage Cheese Pancakes - High Protein/High Calcium REVISED NO OATS

Cottage cheese pancakes are a protein-rich variation of traditional pancakes made by combining cottage cheese with eggs, protein powder, Zen Basil Seeds, and simple pantry ingredients. The cottage cheese adds moisture, a mild tangy flavor, and a boost of protein and calcium, while helping create a soft, fluffy texture.
These pancakes are quick to prepare and cook on a skillet just like standard pancakes. They are often served for breakfast or brunch and can be topped with fruit, yogurt, maple syrup, or a light dusting of powdered sugar. Because cottage cheese provides significant protein, these pancakes are more filling and nutritionally balanced than many traditional pancake recipes.

Avocado Rounds

This is my new favorite go to snack and bread substitute. It is made with 5 easy ingredients and takes only 30 minutes to make. The main ingredient is avocado and it contains a wide range of nutrients. Health benefits of avocado consumption may include improving digestion, lowering the risk of depression, and preventing bone loss.
Also known as an alligator pear or butter fruit, avocados are a type of berry. They grow in warm climates. Avocados provide a substantial amount of monounsaturated fatty acids and vitamins and minerals. They also have a substantial amount of fiber. Incorporating them into a varied, healthy diet can provide a number of benefits.
Half an avocado provides approximately 18% of the daily value of vitamin K1.
This nutrient is often overlooked but is essential for bone health. Taking in enough vitamin K1 can support bone health by increasing calcium absorption and reducing the urinary excretion of calcium.

  • 1 cup liquid egg whites (I used Organic Valley Liquid Egg Whites)
  • 2 tsp garlic powder
  • 1/2 tsp salt

Instructions

  • Preheat oven to 400°F

Bone Bliss Parfait

I loved the idea of making a parfait to enjoy at breakfast or as a snack. Plain, unsweetened yogurt is one of the simplest foods for bone health and it’s so versatile.  For maximum bone benefits, I’m adding my favorite fruit for bone health prunes. I am swirling my prune puree into the yogurt and then topping it with walnuts and wild blueberries.
Prune purée is a multi-talented baking substitute. Use it to replace sugar, eggs, or fat. Use it in baking sweets and well as savory with chicken or turkey. The antioxidants and anti-inflammatory properties of prunes may help prevent bone loss and aid in maintaining healthy bone density and formation, according to clinical studies. “Animal and cell studies suggest that dried plums and/or their extracts enhance bone formation and inhibit bone resorption through their actions on cell signaling pathways that influence osteoblast and osteoclast differentiation.”
Yogurt provides almost every nutrient that your body needs. It’s especially high in calcium, B vitamins, and trace minerals.

Baked Oatmeal

Here is a great make ahead breakfast for you or for company. I used wild blueberries in this recipe which you can buy frozen. Wild blueberries are frozen within 24 hours of harvest to lock in their taste and nutrition. Freezing increases the concentration of anthocyanins, a type of antioxidant, in blueberries. Wild blueberries also have 72% more fiber, 33% more anthocyanins, and twice as many antioxidants as regular blueberries.
