Dukkah Spice Seasoning

Dukkah is Egypt's famous blend of nuts, seeds and warm spices. Make this quick dukkah recipe and store it for use as a snack (with bread and olive oil); as a crust for your meats; or as a nutty topping to add texture and flavor to anything from soups and salads, to chicken, fish or roasted vegetables. The flavor of dukkah can vary depending on the types of nuts and spices in your blend, but dukkah should always have a crunchy, crumbly texture

Equipment

  • 1 mortar and pestle or spice or coffee grinder or food processor

Ingredients
  

  • 2 tbsp pepitas raw
  • 1 tbsp sesame seeds raw
  • 1 tbsp coriander seeds
  • 2 tsp cumin seeds
  • 1/2 tsp black peppercorns
  • 1/4 tsp sea salt

Instructions
 

  • Heat a small to medium skillet over low-medium heat. Add pepitas and toast, occasionally stirring, until they begin to pop and puff up slightly — about 2 minutes. Reduce heat to low.
  • Add sesame seeds, coriander seeds, cumin seeds, and black peppercorns and toast, frequently stirring, until fragrant and the sesame seeds begin turning light brown — about 2 minutes.
  • Transfer to a mortar and pestle (or small food processor)
  • Add salt and crush (or pulse) the mixture into a coarse meal, making sure to break up any whole peppercorns. Taste and adjust as needed.
  • Let cool fully before transferring to a jar.
