Basil Avocado Salad Dressing

I decided to add a new element to my basic Avocado Vinaigrette by adding some beautiful basil from the garden. This creamy avocado basil dressing is vegan, paleo and gluten free. It's perfect mixed in your favorite salad or a dip for artichokes.

Ingredients
  

  • 1 cup basil fresh
  • 1/4 avocado
  • 1/2 cup apple cider vinegar
  • 1/2 cup olive oil
  • 1 tbsp maple syrup
  • 1 dash salt
  • 1 dash pepper
  • 1 tsp Dijon Mustard

Instructions
 

  • Place the basil, avocado, apple cider vinegar, and olive oil in a blender and blend until smooth and creamy.
  • Season with salt and pepper.

Wild Blueberry Vinaigrette

I love wild blueberries. Born in the cold barrens of Maine, wild blueberries must protect themselves from the forces of nature to survive, causing them to develop a higher anthocyanin content than ordinary blueberries. Wild blueberries are rich in polyphenols, which may help prevent osteoporosis and protect bones. Polyphenols are bioactive compounds that help regulate cell-signaling pathways that cause inflammation and oxidative stress, which can affect bone loss and formation.

  • 1 blender or food processor
  • 1 glass jar for storage

Ingredients
  

  • 1 cup blueberries frozen wild blueberries, thawed
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 tbsp lemon juice
  • 2 tbsp  honey or maple syrup
  • 1 dash salt
  • 1 dash pepper

Instructions
 

  • In a blender or a food processor combine blueberries, balsamic vinegar, honey, lemon, olive oil and blend until combined and creamy (about 45 seconds).
  • Taste and add salt and pepper to desired taste and stir or pulse until mixed.
  • Serve over your favorite salad or greens.

Try this dressing on your favorite salad or greens. I just tried using this vinaigrette on sliced cucumbers and fresh blueberries (or thawed wild blueberries) with some fresh mint. What a great summertime treat.

Velvety Vinagrette

Do you like the consistency of creamy dressings but not the calories? I made this dressing using avocado to create the creaminess instead of mayo, sour cream or buttermilk. You can use either lemon juice, lime juice or apple cider vinegar, all of which are alkalizing, which is good for your bones.
Let's not forget about avocados. Avocados are a source of vitamins C, E, K, and B6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They also provide lutein, beta carotene, and omega-3 fatty acids. Avocados contain high levels of healthy, beneficial fats.
Serve it on some beautiful Bok Choy and reap the benefits of a low oxalate vegetable with only 1 mg of oxalates per cup.
