Tandoori Masala Chickpeas

Tandoori masala is a mixture of spices for flavoring foods cooked in a tandoor or clay oven, often used in traditional north Indian and Afghani cooking. But, we are making out dish in a skillet on the stove top. It is usually made with powdered garlic, ginger, cloves, nutmeg, mace, cumin, coriander seeds, fenugreek, cinnamon, black pepper and cardamom. You can purchase this spice here. Chickpeas are what’s known as a complete protein because they contain all nine essential amino acids, which are building blocks that help our bodies function properly. Chickpeas are also an excellent source of non-animal protein. In addition, chickpeas are also brimming with vitamins and minerals. These include calcium, magnesium, potassium, folate and iron.

Ingredients
  

  • 1 tsp coconut oil
  • 3/4 cup coconut milk unsweetened, full fat
  • 1 Tbsp Tandoori Masala Spice
  • 1.5 cups chickpeas organic, canned
  • 1 clove garlic diced
  • 1 Tbsp olive oil extra virgin
  • 2 Tbsp red onion diced
  • 1/2 tsp sea salt
  • 1/2 red pepper large and thinly sliced
  • 4 collard leaves medium sized, remove stems, stack leaves, roll and slice thinly
  • 1/2 lemon juice
  • 1 Tbsp olive oil extra virgin
  • 1 dash black pepper

Instructions
 

  • Melt the coconut oil in a skillet set over medium-high heat.
  • Add tandoori seasoning, salt and pepper.
  • Stir the spices for a few seconds to wake up the flavor.
  • Add onion and continue to stir the mixture until the onion becomes soft and translucent.
  • Add the garlic and cook another minute.
  • Add the coconut milk and mix.
  • Add the chickpeas.
  • Cover skillet and simmer on medium heat for 7-10 minutes.
  • Collards: remove stems, stack leaves, roll and slice thinly.
  • Slice the red pepper
  • In a saucepan, steam the collards and the red bell pepper until the collards becomes wilted and bright green (don’t let it lose its color by over steaming).
  • Remove veggies from the heat, drain and transfer to a serving plate.
  • Drizzle veggies with lemon juice and olive oil.
  • Serve the chickpeas with the vegetables on the side.
  • Leftovers can be eaten for tomorrow’s lunch.

Roasted Brussels Sprouts, Pumfu and Protein Rice

I was craving an Asian flavor dinner using Brussels Sprouts. Roasting the Brussels Sprouts would not give me the protein I want in a meal, so I decided to add Pumfu and a new rice like protein I recently found in my local health food store. Pumfu **is a plant-based protein, made from organic pumpkin seeds. It is an amazing alternative to meat, tofu, eggs, cheese and more! It has a mild nutty taste, a firm texture and takes on flavor easily. Ingredients
  

  • 2 tsp sesame seed oil toasted
  • 2 TBSP Soy Sauce I used Tamari because it is Gluten Free
  • 1 TBSP Sweet Chili Sauce
  • 1 package Pumfu cut into small cubes
  • 1 package Right Rice
  • 1 lb Brussels Sprouts cut in half

Instructions
 

  • Heat the oven to 400 degrees F
  • Remove loose outer leaves, cut the Brussels Spouts in half and add to bowl
  • Cut the Pumfu into small cubes and add to bowl
  • Add the toasted sesame seed oil, tamari and sweet chili sauce to the sprouts and Pumfu and mix thoroughly. Adjust to your personal tastes and add more of or less of the sauce.
  • Add the mix into a roasting pan and spread out so it is not in layers.
  • Roast for approximately 30 minutes, stirring half way through until the sprouts are crisp and the Pumfu is nicely browned.
  • If you have an air fryer you can cook them in the fryer for approximately 20 minutes stirring often until crisp and brown.
  • While the sprouts are cooking prepare the Right Rice by following the package directions. It is easy and the "rice" is added to a pot with boiling water and then removed from the heat. It sits covered for 10-12 minutes.
  • Enjoy!

Ingredients
  

Turkey Prune Meatballs

  • 1 lb ground turkey
  • 2 tbsp olive oil
  • 1/2 red onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp ground cumin
  • 1 tsp curry powder
  • 1 tsp chili flakes
  • 3/4 cup breadcrumbs gluten free (optional)
  • 1 egg
  • 1/2 cup prunes finely chopped
  • 1/4 cup parsley chopped
  • 1/4 cup cilantro chopped
  • 1 tsp salt

Prune Glaze

  • 1/2 cup prunes chopped
  • 1/8 cup honey
  • 1/8 cup apple cider vinegar
  • 1/2 cup boiling water
  • 1/4 tsp chili flakes

Instructions
 

Prune Glaze

  • In the jar of a blender, add the prunes, honey, vinegar, water, salt and chili flakes.
  • Blend on high until completely smooth.

Turkey Prune Meatballs

  • Sauté the onion, garlic and ginger in olive oil over medium heat until translucent.
  • Add the spices and sauté for an additional minute or two.
  • Place the ground turkey into a bowl, add the cooled onion spice mix, breadcrumbs and egg.
  • Combine well.
  • Add the prunes, cilantro and parsley and salt.
  • Mix gently, but thoroughly.
  • Form into small or large meatballs.
  • Place the meatballs on a parchment lined baking sheet and roast at 400 degrees F for 10 minutes.
  • Brush the meatballs with the prune glaze and continue baking for 5 minutes until the internal temperature of the meatballs reach 165 F.
  • You can also serve extra glaze on the side for additional yumminess.

This vibrant, colorful, beautiful kale and red cabbage salad is my go to salad. Kale is a nutrition superstar due to the amounts of vitamins A, K, B6 and C, calcium, potassium, copper and manganese it contains. One cup of raw kale has just 33 calories and only 7 grams of carbohydrate. So, it’s a very diabetes-friendly/weight-friendly vegetable. Kale is a member of the cruciferous vegetable family along with cauliflower, Brussels sprouts, cabbage, broccoli, collard greens, kohlrabi, rutabaga, turnips and bok choy. Red cabbage is a good source of vitamin K and provides small amounts of calcium, magnesium, and zinc, which can help build and maintain healthy bones. Ingredients
  

Raw Kale Salad

  • 4 cups kale curly chopped
  • 3 cups red cabbage thinly sliced
  • 3/4 cups almonds chopped
  • 1/2 cup cheese (optional) small cubes
  • 3/4 cup currants dried

Lemon Dressing

  • 2 lemons approximately 1/4 cup juiced
  • 1/2 tbsp salt rock salt-Himalayan Sea Salt
  • 10 tbsp olive oil
  • 2 cloves garlic finely diced

Instructions
 

Raw Kale Slad

  • wash vegetables and dry - Important to dry as the dressing won't adhere to the kale if it is wet
  • remove the center stem from kale and chop into small pieces
  • cut the cabbage into quarters and then thinly slice
  • add kale and cabbage to a large bowl
  • add currants, almonds, cubed cheese to the salad

Lemon Dressing

  • macerate salt and garlic in a mortar and pestle
  • add macerated salt and garlic to a glass jar
  • add the lemon juice and olive oil to the jar with a lid
  • shake vigorously
  • add the dressing to the salad
  • refrigerate any leftover dressing and use on other salads, steamed veggies or as a dip for artichokes

Notes

You can add even more protein to this salad by using 2 cups of cubed chicken breast.  Vegetarians you can add 2 cups of garbanzo beans for extra protein.

Ingredients
  

  • 30 oz cannellini beans 2 cans - Eden organic and BPS free
  • 3 tbsp olive oil
  • 1 tsp oregano dried
  • dash salt to taste
  • dash black pepper to taste
  • 1/2 cup prunes prune puree
  • 4 cloves garlic chopped
  • 1 cup red wine
  • 1/2 cup green olives Castelvetrano olives pit removed and halved
  • 1/4 cup capers

Instructions
 

  • In a large, deep skillet, heat 1 tablespoons olive oil over medium heat. Add the chopped garlic and sauté until soft and fragrant. As soon as the edges of the garlic start to color, add the red wine and simmer until the wine is reduced by half, 5 to 10minutes.
  • Transfer the cooked beans to the reduced wine in the skillet, then add about the saved bean liquid and add water to make 1 cup.  (You want just enough to mostly cover the beans).
  • Add the olives, prune puree and another  2 tbsp olive oil, and simmer over medium, stirring occasionally, until the flavors meld and the liquid thickens slightly to form a sauce, 10 to 15 minutes. Season to taste with salt and pepper and add the capers.

Baked Chicken Thighs with Prune Puree

In follow up to my Prune Purée recipe, here is an idea of how to use the purée to make a moist and tasty chicken dish. I used bone in skin on chicken thighs, but you can make this with boneless skinless chicken thighs as well. It will cook faster, so reduce the cooking time.

Ingredients
  

  • 12 oz chicken thighs bone in/skin on
  • 1 tbsp olive oil
  • 2 tsp spices salt, pepper, garlic powder, onion powder, Berbere
  • 2 tbsp prune prune puree

Instructions
 

  •  Preheat oven to 425°F. Line a pan with parchment paper and place a baking  rack on top.
  • Dab chicken skin dry with a paper towel to remove any moisture.
  • Drizzle chicken with olive oil and coat with seasoning.
  • Place on the rack and bake for 20 minutes. Now coat the chicken thighs with prune purée.
  • Return to the oven and continue cooking for another 15-20 minutes until the chicken reaches 165°F.

Notes

What makes the dark meat of chicken different than the white meat? The difference is due to the amount of myoglobin present in different parts of the chicken. Myoglobin is an oxygen-carrying protein that gives dark meat its trademark reddish color. The more myoglobin present, the darker the meat and the richer the nutrients.
What are the benefits of dark meat? Chicken legs and thighs are an excellent source of many essential nutrients. Iron and zinc, which are important for a healthy immune system, are present in much higher quantities in dark meat than in white meat.   • I a large skillet, dry roast the pepitas on medium heat
  • Heat for 5 minutes, stirring constantly until the seeds pop
  • Cool for 5 minutes
  • In a blender or food processor, combine the pepitas, vinegars, flax oil and tamari
  • Blend until the seeds are chopped
  • Add the water and blend for 30-60 seconds

Health benefitsPumpkin seeds are higher in protein than many other seeds and nuts, and they are a valuable source of Omega-3 fatty acids. An excellent source of iron, zinc, phosphorus and Vitamin A, they also contain calcium and some of the B Vitamins. They are recommended by some to expel pinworms, roundworms and other intestinal parasites, and are considered medicinal for the liver, colon and spleen-pancreas. Also used for motion sickness, nausea, impotency and swollen prostate.

Bone-Loving Creamy Collard Yam Soup

This Creamy and (dreamy) Collard Yam Soup is bone-loving and vegan. Cruciferous veggies are part of the Brassica genus of plants and are rich in vitamins and minerals as shown in the chart below. They contain a group of substances known as glucosinolates, which are sulfur-containing chemicals that may fight cancer. I love the rich color, taste, and texture of this soup. This “cook-once-eat-twice” will make a fantastic big pot for several servings.Collards are a member of the cruciferous family.

Equipment

  • 1 medium soup pot

Ingredients
  

  • 1 garlic bulb, minced
  • 1 onion diced
  • 1 yam diced
  • 2 bunches collard greens sliced into ribbons
  • 2 tsp sea salt
  • 1/2 cup cashews

Instructions
 

  • Sauté onions and garlic with sea salt in a little water until they sweat.
  • Add yams and a little more water to cover
  • Bring to a boil then turn down to simmer until yams are soft (approximately 20 minutes)
  • Add collard greens and more water to cover.
  • Turn ff the heat, cover with a lid, and let sit for a few minutes until greens turn deep green and soften.
  • Blend in small batches in a blender or in the pot with an immersion blender.
  • Add cashews and a tiny splash of cider vinegar. Blend until smooth and adjust the consistency with more water if you like it thinner.
  • Taste and season with salt and pepper to taste.

  • 1 cutting board

Ingredients
  

  • 1 large onion peeled and chopped peeled and chopped
  • 1 cup bell pepper color choices: green, red, orange, yellow - seeded and chopped
  • 3 cloves garlic peeled and finely chopped
  • 1 - 28 oz canned tomatoes or 3 fresh tomatoes (oxalates)
  • 3 medium sweet potatoes peeled and cut into 1 inch cubes (oxalates)
  • 1 - 16 oz canned black beans drained and rinsed
  • 2 cups zucchini squash cubed
  • 1 tbsp olive oil organic
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp ground pepper
  • 1/4 tsp salt

Instructions
 

  • In a large pot, heat the oil over medium heat.
  • Add onions and bell pepper and cook until softened.
  • Add tomatoes (if using canned, add the liquid), sweet potatoes, chili powder, cumin, oregano, salt and pepper and simmer for 20 minutes
  • Add zucchini and canned beans. Cook until vegetables are tender and chili has thickened slightly.Adjust seasonings.
  • Serve hot with choice of garnishes.
  • Garnish suggestions: shredded cheese, dollop of plain full fat yogurt, avocado slices, chopped jalapeño chilies, chopped cilantro, fresh lime wedges.
