Stufffed Zucchini

We love to make these stuffed zucchini boats for an easy summer dinner! It is a versatile dish where hollowed-out zucchini serves as a vessel for various fillings. The zucchini is typically cut in half lengthwise, and the soft, seedy center is scooped out to create a boat-like shape. Common fillings include: Ground meat (beef, turkey, or lamb), rice or quinoa, cheese (often feta or mozzarella), vegetables (like tomatoes, onions, and peppers), herbs and spices. The stuffed zucchini is usually baked in the oven until the zucchini is tender and the filling is cooked through. This dish can be adapted for different diets, including vegetarian or vegan versions.

Ingredients
  

  • 1 zucchini large, halved
  • 1 tsp olive oil
  • 1/2 cup onion diced
  • 2 cloves garlic diced
  • 1/2 cup cherry tomatoes diced
  • 1/2 cup sweet peppers red, orange or yellow
  • 1/4 cup quinoa cooked
  • 2 tsp lemon zest
  • 2 tbsp herbs chopped, thyme, rosemary, basil
  • 1 dash salt
  • 1 dash pepper
  • 1/4 cup pine nuts or nut of choice
  • 1/4 cup cheese shredded cheddar or nutritional yeast for vegetarians and vegans

Instructions
 

  • Preheat the oven to 450°F and line a baking sheet with parchment paper.
  • Use a small spoon to hollow out the flesh of the zucchini, leaving a little more than ¼-inch thickness around the edges.
  • Saute the onions and garlic in 1 tsp of olive oil until softened.
  • Add the tomatoes, peppers, cooked quinoa, cheese (or nutritional yeast), lemon zest, herbs, pine nuts, salt and pepper. Continue sautéing for a few minutes until the flavors blend.
  • Drizzle the hollowed out zucchini with olive oil and sprinkle with salt and pepper.
  • Spoon in the filling and bake for 16 to 18 minutes, or until the filling is set and is golden brown and the zucchini is fork tender.

Apple Broccoli Chickpea Salad

Enjoy a healthy apple broccoli salad with chickpeas, dried cranberries or raisins, pecans or walnuts, and a delightful avocado vinaigrette. This versatile dish works wonderfully as a lunch or a side salad and keeps well in the refrigerator for several days, making it perfect for leftovers. For easier digestion, I prefer to blanch the broccoli, but it can also be enjoyed raw. An added benefit is the protein from the chickpeas. Simply toss all the ingredients together in a bowl to create this delicious salad.

Salad

  • 1 head broccoli blanched and chopped
  • 1 cup apples diced
  • 1 cup carrots shredded
  • 1 can chickpeas 15 oz rinsed and drained
  • 1/3 cup scallions diced
  • 1/3 cup cranberries or raisins
  • 1/3 cup walnuts or pecans

Dressing

  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tsp mustard
  • 1 tsp maple syrup
  • 1/4 avocado optional for creamy dressing
  • 1 dash salt to taste
  • 1 dash black pepper  to taste

Instructions
 

  •  In a large bowl, add the chopped broccoli, chickpeas, apples, carrots, green onions, cranberries, and pecans.
  • Make the dressing by whisking together the vinegar, olive oil, mustard, maple syrup, salt and pepper.
  • If using the avocado to make a creamy dressing, place all ingredients into a blender and blend until smooth.
  • Pour the dressing over the salad and toss to combine.

Quinoa Salad

I recently tried this Peruvian Quinoa Salad at a local restaurant and decided to come home and reproduce it. Because quinoa does contain oxalates I added some feta cheese to counter the oxalates.
Quinoa has the following health benefits.
Nutrient-Rich: High in protein, fiber, vitamins, and minerals.Gluten-Free: Suitable for celiac disease and gluten intolerance. Antioxidants: Contains quercetin and kaempferol, which have anti-inflammatory and anti-cancer properties.   • 1 cup quinoa Rinsed to remove the saponins which make it bitter. Prepare according to package directions.
  • 1 cup avocado cut into bite sized pieces
  • 1 cup cherry tomatoes cut in half or quarters
  • 1/2 cup celery diced
  • 1/2 cup feta cheese crumbled
  • 8 spears asparagus steamed to firm, but tender, Cut into bite size pieces

Dressing

  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 TBSP lime juice
  • 1 tsp brown mustard
  • 1 tsp maple syrup
  • salt and pepper to taste
  • 1/4 avocado

Instructions
 

Salad

  • Cook quinoa according to package directions and let cool.
  • Prep the tomatoes, avocado, celery, and asparagus and feta cheese.
  • Mix all ingredient together in a bowl.
  • Add 1/4 cup dressing and toss to coat. Add more dressing if desired.

Dressing

  • Add all ingredients into a blender. Process until creamy.

Ingredients
  

  • 1 block extra firm tofu pressed
  • 1/2 cup sweet chili sauce 365 by Whole Foods Market, Organic Sweet Chili Sauce https://amzn.to/3x3zRtN
  • 1 tbsp Tamari preferably low sodium
  • 2 tbsp cornstarch
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 pinch salt and pepper
  • 2 tbsp olive oil

Instructions
 

  • Press the block of tofu for at least 20 minutes to remove excess water. Pressing improves the texture of the tofu and will also help the tofu crisp up when cooking. Press easily by putting the tofu in between two plates and stacking heavy items on top.
  • Cut the tofu in to 16 large cubes or rectangles or any size you like.
  • Toss the tofu in Tamari sauce (low sodium) until coated and then add the cornstarch, garlic, onion, salt and pepper.
  • Air Fryer - Place parchment paper into your air-fry and coat with olive oil. Also spread a little spread olive oil over the tofu pieces and after preheating the air-fryer heat them at 400 degrees for 5 minutes and then turn and cook for another 5 minutes until golden brown.
  • Alternately, heat a large pan on medium-high heat. Add 1-2 tablespoons olive oil or enough to coat the base of the pan and pan fry each side until golden brown, about 3-5 minutes each side.
  • Toss the tofu with 1/4 cup sweet chili sauce and add more as desired when serving.

Bone-Boosting Asian Chicken and Cabbage Dish

Try this delicious combination of chicken and cabbage. Incorporating cabbage into your diet can be easy and versatile. Red and green cabbage is loaded with anthocyanins which acts as an antioxidant which fights free radicals. It can be eaten raw in salads, fermented in dishes like sauerkraut and kimchi, or cooked in soups, stews, and stir-fries. Pairing chicken with other bone-healthy foods like leafy greens (for calcium), seeds (for magnesium), and fruits (for vitamins C and K) can create a well-rounded diet that supports overall bone health. This recipe includes it all!
Note: if you have hypothyroidism it is wise to consume cabbage in moderation due to containing goitrogens.

  • 4 cups cabbage shredded, red and or green
  • 2 chicken breast or chicken thighs cut into pieces and sauteed
  • 1 cup orange pieces
  • 1/2 cup green onions diced
  • 1/4 cup cilantro
  • 1 avocado cubed
  • 1/4 cup pumpkin seeds
  • salt and pepper to taste
  • 2 Tbsp olive oil

Dressing

  • 1/4 cup sesame oil toasted
  • 1/4 cup tamari low sodium
  • 2 Tbsp maple syrup
  • 1/4 cup orange juice
  • 1 Tbsp orange zest

Instructions
 

Salad

  • Shred the cabbage
  • Use a zester to zest the oranges
  • If using mandarin oranges, just peel and pull into sections
  • Cut up the chicken into bite size pieces. Season with salt and pepper and saute in olive oil for approximately 5 minutes until cooked through.
  • Dice the green onions
  • Cube the avocado
  • Chop the cilantro
  • Mix all ingredients in a serving bowl

Dressing

  • In a lidded glass jar, add the sesame oil, tamari, maple syrup, orange juice and orange zest. Shake well until completely emulsified.
  • Pour dressing over the combined salad and taste. Add more salt and pepper if needed.

Avocado Toast with Salmon

Here is one of my favorite breakfasts, Avocado on Toasted Sourdough Bread with Salmon. On my plate I added some cherry tomatoes and sliced mango. The salmon was leftover from dinner the night before. I decided to air fry the salmon filet and it was perfectly cooked in 8 minutes. Breakfast only takes about 10 minutes to make since the salmon is already prepared. Just toast the bread, smash the avocado and layer it with the salmon. Drizzle some lemon juice on top and you are ready for the day.

Here is one of my favorite make once eat three times recipes. Eating from the rainbow is so easy when you make this chicken stir fry.  Stir fry dinners are the way to go. You get your protein, your veggies, everything in one skillet and in no time your meal is ready. I like to prep my chicken and veggies earlier in the day and when I am ready for my meal all I have to do is cook it in my skillet. This is called mise en place that means "putting in place" or "gathering". In cooking, it refers to the organization and discipline of a good chef, who prepares and organizes all their ingredients and supplies before starting to cook.

Stir Fry

  • 1 lb chicken breasts skinless, boneless, cut into 1 inch pieces - optional for vegetarians or vegans use tempeh or pumfu as your protein source
  • 2 tbsp olive oil
  • 1.5 cups broccoli florets
  • 1/2 yellow pepper cut into one inch pieces
  • 1/2 red pepper cut into one inch pieces
  • 1/2 cup carrots julienne
  • 1 zucchini julienne
  • 1/2 cup sugar snap peas sliced
  • 1/2 onion cut into half moons
  • 1 dash pepper to taste
  • 1 dash salt to taste

Sauce

  • 1/4 cup tamari low sodium
  • 1/8 cup sesame seed oil toasted
  • 1/8 cup olive oil
  • 1/8 cup maple syrup
  • 2 tsp ginger minced
  • 2 cloves garlic minced

Instructions
 

Stir Fry

  • Add 1 tablespoon olive oil to the the skillet or wok and cook over medium heat
  • Add the chicken and season with salt and pepper
  • Cook for about 3-5 minutes until cooked through. Remove chicken from the skillet and set aside.
  • Add the onions, broccoli, bell peppers, carrots, zucchini and snap peas to the skillet, stirring occasionally, and cook until crisp tender, about 5 minutes.
  • Add chicken back into the pan and stir to combine.
  • Add the sauce to the pan and pour over the chicken and vegetables and stir to combine.
  • Cook for about one minute and serve on rice if desired.

Sauce

  • Add all of the ingredients into a jar and shake until evenly mixed

Ingredients
  

  • 1 15 oz can chickpeas drained and rinnsed
  • 2 tbsp onion minced
  • 2 ribs celery finely diced
  • 1/3 cup mayonaise vegan. I like Primal Kitchen Chipotle Mayo
  • 2 tsp Dijon mustard
  • 2 tbsp dill pickles chopped
  • 1/2 lemon juiced
  • 1 dash salt to taste
  • 1 dash pepper to taste
  • 1 tsp dill
  • 1 tsp dulce optional for fishier taste

Instructions
 

  • After rinsing your chickpeas, make sure to dry as much of the water as you can.
  • Add the chickpeas into a bowl and mash with the back of a fork or a potato masher.
  • Add remaining ingredients and stir to combine.
  • Add salt and pepper to taste.
  • Store in an airtight container in the fridge for up to 5 days.
