Collard Roll Ups

Collard roll-ups are fresh, nutrient-packed wraps made using large collard green leaves instead of tortillas. The leaves are lightly blanched or steamed to make them pliable, then filled with a variety of wholesome ingredients, such as, carrots, avocado, radishes, peppers, and apples. These colorful, hand-held wraps are rich in fiber, calcium, and antioxidants—making them a heart-healthy, low-carb, and vibrant alternative to traditional wraps.

  • 1 cutting board

Ingredients
  

  • 2 collard leaves large, organic
  • 1 avocado sliced
  • 2 radishes sliced
  • 1 carrot shredded
  • 1 red pepper sliced
  • 1 small cucumber sliced
  • 1 apple sliced
  • 2 tbsp pumpkin seeds dry roasted

Instructions
 

  • Remove the collard leaves from the bunch.
  • Place leaves flat (rough side up) on a cutting board and gently glide a sharp paring knife across the length of the stem, shaving it down to the same thickness as the rest of the leaf.
    Do this for each leaf being careful not to nick or tear the leaf with the tip of your knife.
  • Place the collard leaves into a bath of hot water for a 1 minute or 2 until the leaves are softer and will roll easily.
  • Dry the leaves completely and add your ingredients to the center of the collard leaf.
  • Fold in the sides of the collards and completely roll it up into a comoact package.
  • Cut the roll up in half or eat it whole. The second wrap can be stored in the refrigerator and eaten the next day.
