Salmon in Nori Muffin Cups

Try this very flavorful way of eating salmon. Not only is it flavorful, but it is a fun finger food. Salmon is a wonderful go to for protein. Each salmon cup provides 8 grams of protein. Salmon is a nutritious food that contains protein, vitamins, and healthy fats. Salmon is a good source of omega-3 fatty acids, which are heart-healthy and can help reduce inflammation and support brain health. Salmon and other types of fatty fish offer an array of bone-boosting nutrients. Salmon also contains selenium and studies have shown that selenium intake may be necessary for bone health.

Equipment

  • 1 silicone muffin tray
  • 1 knife
  • 1 bowl

Ingredients
  

Nori and Rice

  • 3 sheets nori paper
  • 1 cup rice cooked

Salmon

  • 1/2 lb salmon filet remove skin and cube
  • 1 Tbsp olive oil
  • 1.5 tsp sesame oil toasted
  • 1.5 tsp tamari
  • 1.5 tsp rice wine vinegar
  • 1.5 tsp honey
  • 1.5 tsp ginger ground
  • 2 cloves garlic
  • 2 scallions diced
  • 1.5 tsp sesame seeds black preferred

Glaze

  • 1 Tbsp sesame oil toasted
  • 2 Tbsp honey
  • 2 tsp tamari
  • 1 tsp ginger ground
  • 1 tsp sesame seeds black preferred

Instructions
 

  • Preheat oven to 400 degrees F
  • Cut the nori sheets into 4 equal squares
  • In a bowl, whisk the olive oil, toasted sesame oil, tamari, rice wine vinegar, honey, ginger, garlic, sesame seeds and scallions.
  • Add the cubed salmon and marinate for an hour.
  • To each cut nori sheet add 1 tbsp cooked rice. Fully cooled.
  • Move the nori square to a muffin slot, pushing down the rice.
  • Add 4-5 marinated salmon cubes to each muffin round. Fill all 6 muffin rounds.
  • Place muffin pan into the heated oven and bake for 15 minutes,
  • Whisk together all of the glaze ingredients and add some to the baked salmon for added flavor.
