Cauliflower Pasta with Pesto

Following our cauliflower theme I want to introduce you to another way to eat pasta. This one is gluten free, and is made from three vegetarian flours, lentil, pea and cauliflower. It is lower in carbohydrates than wheat pasta, and higher in protein and fiber. It also contains good amounts of calcium, potassium and iron. Add either a homemade pesto or a store bought (Gotham Greens makes a Regular or Vegan Pesto) variety and this makes a great lunch or dinner.

Equipment

  • 1 pot medium

Ingredients
  

  • 3.5 oz Cauliflower Pasta Blend of Lentil, Pea and Cauliflower Flours
  • 2 Tbsp Pesto Fresh Basil, Olive Oil, Pine Nuts

Instructions
 

  • Bring 2-3 quarts of water to a boil
  • Add 2 tsp salt to the water
  • Add pasta
  • Cook uncovered for 5-6 minutes - stir occasionally
  • Rinse and dtrain pasta
  • Serve with Pesto - homemade or store bought
