  • 2 medium delicata squash scrubbed and halved lengthwise, seeds removed
  • 1/2 tbsp olive oil
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cardamom
  • 1/4 tsp salt

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • Slice the squash into ½-inch thick half-moons (leave the skin on—it becomes tender when roasted).
  • Toss the slices in a large bowl with olive oil, cinnamon, nutmeg, cardamom, and salt until evenly coated.
  • Arrange the slices in a single layer on the prepared baking sheet.
  • Roast for 25–30 minutes, flipping halfway through, until golden and caramelized around the edges.
  • Serve warm as a side dish or toss into grain bowls, fall salads, or yogurt-tahini drizzled plates.
