Coconut Cauliflower Rice

Here is another way to use cauliflower ricewith a different taste profile. Cauliflower soaks up flavors as it cooks, butremains firm. That is why adding the coconut milk and shredded coconut to thisdish adds a lovely coconut flavor to the cauliflower. Cauliflower is themildest tasting member of the brassica family, which includes broccoli, kaleand cabbage. You can find it in the markets year round. When choosing yourcauliflower pick ones that are milky white without black spots ordiscoloration. The leaves are best when green and firm. Store your cauliflowerin the refrigerator in cellophane wrapping or a plastic bag.

Equipment

Ingredients
  

  • 1/2 head cauliflower cut and processed like couscous
  • 1.5 tbsp coconut oil
  • 2 cloves garlic minced
  • 1 onion small, diced
  • 2 tbsp coconut milk
  • 2 tbsp coconut unsweetened, shredded
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp lime juice
  • 2 tbsp parsley finely chopped

Instructions
 

  • Remove the core and let the cauliflower dry completely.
  • Roughly chop the cauliflower into florets, and place the cauliflower in a food processor.
  • Pulse until the cauliflower is small and resembles couscous.
  • In a large skillet over medium heat, heat the coconut oil, then add the onions and garlic and cook until soft and translucent, about 5-7 minutes.
  • Add the cauliflower rice and stir to combine.
  • Add the coconut milk
  • Add the shredded coconut
  • Season with salt and pepper and continue to cook, stirring frequently until the cauliflower softens, about 3-5 minutes.
  • Remove from heat and transfer to a large serving bowl.
  • Add lime juice and fresh parsley and toss gently to combine. Serve warm.
