Mediterranean Baked Chicken with Vegetables and Feta

Who doesn't love a one dish meal. It is easy to prep, loaded with protein and calcium and so satisfying. Mediterranean baked chicken with vegetables and feta combines chicken seasoned with Italian seasoning and roasted alongside broccoli, tomatoes, white beans and bell peppers.

Equipment

  • 1 baking dish 9x13

Ingredients
  

  • 2 chicken breasts deboned ** (other protein options listed below)
  • 1 cup broccoli florets
  • 1 red bell pepper diced
  • 1/2 can cannellini beans drained and rinsed
  • 1/2 cup cherry tomatoes halved
  • 1 tsp Italian seasoning
  • 1 dash salt
  • 1 dash pepper
  • 1 tbsp olive oil
  • 1/2 cup feta cheese crumbled

Instructions
 

  • Pre-heat oven to 375 degrees
  • Place chicken and broccoli in 9x13 baking dish
  • Add beans, vegetables( tomatoes and peppers) plus seasonings and drizzle with olive oil
  • Bake for 25-30 minutes
  • Top with feta cheese and bake another 5 minutes

All these provide similar protein content. Cooking times vary - fish/seafood needs less time, pork/lamb slightly more.
